Recipe Yield: 2-3 servings

INGREDIENTS

1 large avocado, ripe
2 cans (5 oz each) tuna, drained
1/4 cup red onion, finely chopped
1 tbsp olive oil
1/4 cup feta cheese, crumbled
1/4 cup celery, diced
1.5 tbsp fresh lemon juice
1/2 tsp Dijon mustard
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
2 tbsp fresh parsley, chopped
1 tbsp cucumber, finely diced (optional)

INSTRUCTIONS

1. Mash the avocado: In a medium bowl, mash the avocado until smooth but slightly chunky.

2. Combine the ingredients: Add the drained tuna, red onion, celery, feta cheese, olive oil, lemon juice, Dijon mustard, garlic powder, salt, and black pepper. Stir well to combine.
