10 oz Broccoli, fresh
10 oz Cauliflower, fresh
1/2 cup Walnuts, chopped
1/2 cup Cranberries, dried
1/4 cup Parmesan Cheese, grated
3 tbsp. Olive Oil
1/4 tsp. Onion Powder
1/4 tsp. Garlic Powder
1/4 tsp. Oregano
1/4 tsp. Paprika
1/4 tsp. Crushed Red Pepper
1 pinch Salt, Ground Black Pepper
INSTRUCTIONS
1. Preheat your oven to 425°F.
2. Separate the cauliflower and broccoli florets from the heads.
3. In a bowl, combine half of the spice mixture with the broccoli and the other half with the cauliflower, ensuring they are evenly coated.
4. Line a baking sheet with parchment paper.
5. Spread the seasoned broccoli and cauliflower evenly on the baking sheet.
6. Roast in the preheated oven for 8-10 minutes, until they are tender and lightly browned.
7. Remove from the oven and transfer the roasted vegetables into a serving dish.
8. Drizzle with 1 tablespoon of olive oil, sprinkle finely chopped walnuts, cranberries, and Parmesan cheese on top, and toss gently to combine.
