Recipe Yield: 9-12 bars

INGREDIENTS

For the Crust & Topping:
1 1/4 cup all-purpose flour
1/2 cup unsalted butter, melted
half cup light brown sugar, packed
1/2 tsp salt
1/2 tsp cinnamon

For the Apple Filling:
2 1/2 cups apples, peeled and finely diced (Granny Smith or Honeycrisp)
1/4 cup granulated sugar
1 tbsp light brown sugar
3/4 tsp cinnamon
1/8 tsp nutmeg
1 tbsp cornstarch
1 tsp lemon juice
1/2 tsp vanilla extract

INSTRUCTIONS

1. Preheat & Prep: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.

2. Make the Crust & Topping: In a medium bowl, mix flour, melted butter, brown sugar, salt, and cinnamon until the mixture is crumbly yet holds together when pressed. Reserve 3/4 cup of this mixture for the topping. Press the remaining mixture firmly into the bottom of the pan, forming an even layer. Bake for 12 minutes, until slightly golden.

3. Prepare the Apple Filling: In a bowl, toss the diced apples with granulated sugar, brown sugar, cinnamon, nutmeg (if using), cornstarch, lemon juice, and vanilla. Let sit for 5 minutes to allow the flavors to develop and the apples to release juices.

4. Assemble: Spread the apple mixture evenly over the pre-baked crust. Sprinkle the reserved crumb mixture on top, gently pressing it down to help it stick.

5. Bake to Perfection: Bake for 35-40 minutes, until the top is golden brown and the apple filling is bubbling. Let cool completely in the pan before slicing.

6. Serve & Enjoy: Slice into 9 bars for a bakery-style treat or 12 smaller bars for bite-sized portions. Optional: Drizzle with caramel sauce or serve with a scoop of vanilla ice cream for extra indulgence!
