Recipe Yield: 12 bars

INGREDIENTS

1 cup all-purpose flour, spooned & leveled
½ tsp baking powder
1 large egg, room temperature
¾ cup butterscotch chips
½ cup chopped pecans
9 tbsp unsalted butter, melted
⅔ cup packed light brown sugar
⅓ cup packed dark brown sugar
1 tsp vanilla extract
½ tsp cornstarch
¼ tsp salt

INSTRUCTIONS

1. Preheat & Prep: Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper or lightly grease it for easy removal.

2. Mix Wet Ingredients: In a large bowl, whisk together melted butter, light brown sugar, and dark brown sugar until smooth. Let cool slightly, then whisk in egg and vanilla extract until fully combined.

3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, cornstarch, and salt. Gradually stir into the wet mixture until just combined.

4. Fold in Butterscotch & Pecans: Gently fold in butterscotch chips and pecans, ensuring even distribution. The batter will be thick.

5. Bake to Perfection: Spread the batter evenly into the prepared pan. Bake for 22-26 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs. (Do not overbake! They will set as they cool.)

6. Cool & Slice: Let bars cool in the pan for 15 minutes, then transfer to a wire rack. Once completely cooled, cut into 12 bars and enjoy!
