Recipe Yield: 6–8 servings

INGREDIENTS

12 oz egg noodles, cooked and drained
1 lb ground beef (or ground turkey)
one small onion, finely chopped
1 ½ tsp garlic powder
1 ½ tsp salt
one cup shredded sharp cheddar cheese
1 cup frozen peas and carrots, thawed
¾ tsp black pepper
1 tsp smoked paprika
1 tbsp butter (for cooking)

Homemade Cream Sauce:
3 tbsp butter
3 tbsp all-purpose flour
½ cup homemade beef broth
½ cup heavy cream
2 cups whole milk
½ tsp salt
½ tsp ground mustard
¼ tsp ground nutmeg

Topping:
1 cup homemade breadcrumbs
3 tbsp melted butter

INSTRUCTIONS

1. Preheat & Prepare: Preheat your oven to 350°F. Grease a 9×13-inch baking dish.

2. Cook the Beef: In a large skillet over medium heat, melt 1 tbsp butter, then add the ground beef and chopped onion. Cook until browned, breaking it up as it cooks. Drain any excess fat, then season with salt, black pepper, garlic powder, and smoked paprika.

3. Make the Cream Sauce: In a saucepan over medium heat, melt 3 tbsp butter. Whisk in flour, stirring constantly for 1–2 minutes to create a roux. Slowly add milk, broth, and heavy cream, whisking to prevent lumps. Stir in salt, ground mustard, and nutmeg. Simmer for 3–4 minutes, until thickened. Remove from heat.

4. Assemble the Casserole: In a large bowl, combine cooked egg noodles, beef mixture, homemade cream sauce, shredded cheddar, and thawed peas and carrots. Stir until evenly coated, then transfer to the prepared baking dish.

5. Add the Amish-Style Topping: In a small bowl, mix homemade breadcrumbs with melted butter. Sprinkle evenly over the casserole. For a cheesier finish, you can skip the breadcrumbs and top with shredded cheddar cheese instead. Or, use both breadcrumbs and cheese for an extra rich and crispy topping!

6. Bake to Perfection: Bake uncovered for 30–35 minutes, or until bubbling and golden brown on top.

7. Rest & Serve: Let the casserole sit for 5 minutes, then serve warm. Enjoy with homemade bread and butter!

HELPFUL TIPS TO PERFECT THIS RECIPE

  • Make Amish-Style Breadcrumbs: Tear 2 slices of homemade bread into small pieces, toast in a pan with 2 tbsp butter until golden, then crush lightly.
  • Use Fresh Ingredients: Instead of frozen veggies, use diced fresh carrots and peas for a more traditional taste.
  • Swap the Cheese: Amish cooks often use colby or farmer’s cheese instead of cheddar for a milder, creamy flavor.
