INGREDIENTS

2 cups elbow macaroni
3 tbsp unsalted butter
3 tbsp all-purpose flour
2 ½ cups whole milk (slightly warmed)
2 cups shredded white sharp cheddar cheese
¾ cup grated parmesan cheese
¼ tsp garlic powder
¾ tsp salt (adjust to taste)
½ tsp ground black pepper
¼ cup finely chopped chives (for garnish)
½ cup panko breadcrumbs and 2 tbsp melted butter (for topping, optional)
½ cup additional cheese mix (white sharp cheddar & parmesan, optional)

INSTRUCTIONS

1. Cook the macaroni: Preheat oven to 350°F. Boil salted water, cook macaroni for 7–8 minutes until al dente. Drain and set aside.

2. Make the cheese sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 2–3 minutes until smooth and golden. Slowly whisk in warm milk, stirring until thickened, about 3–4 minutes.

3. Add cheese and seasonings: Reduce heat, stir in cheddar and parmesan until melted. Season with salt, pepper, and garlic powder. Taste and adjust as needed.

4. Combine macaroni and sauce: Add pasta to sauce and gently fold until evenly coated.

5. Prep for baking: Grease a 9×9 dish. Spread mac and cheese mixture evenly in the dish.

6. Top and bake: Sprinkle with extra cheese. For crunch, top with buttered panko. Bake 20–25 minutes, until bubbly and golden.

7. Finish and serve: Let cool for 5 minutes. Garnish with chopped chives before serving.
