INGREDIENTS

1 lb cooked shrimp, peeled, deveined, and chopped into bite-sized pieces
1/2 cup fresh lime juice (about 4 limes)
1/4 cup fresh lemon juice (about 1 large lemon)
1/4 cup fresh orange juice (about 1/2 an orange)
1/2 red onion, finely diced
1 small jalapeño, finely diced (seeds removed for less heat)
3/4 cup cherry tomatoes, diced
3/4 cup cucumber, peeled and diced
1/4 cup fresh cilantro, chopped
1 avocado, diced
1 tbsp extra virgin olive oil
1/2 tsp garlic powder
Salt and black pepper, to taste
1/2 tsp honey or agave (optional)
Tortilla chips or tostadas, for serving

INSTRUCTIONS

1. Prep the shrimp: Chop the cooked shrimp into bite-sized pieces and place them in a glass or non-reactive bowl.

2. Marinate in citrus: Pour the lime, lemon, and orange juice over the shrimp. Cover and refrigerate for 15 minutes to allow the flavors to meld.
