INGREDIENTS

2 thick slices sourdough or multigrain bread
1 medium ripe avocado
1½ tsp fresh lemon juice
⅛ tsp freshly ground black pepper
Pinch of fine sea salt, only if needed
4 oz thinly sliced smoked salmon
¼ cup microgreens
1 tbsp chopped fresh chives

Optional Toppings:
1 tsp capers, rinsed and drained
½ tsp everything bagel seasoning
Pinch of red pepper flakes
Lemon wedges, for serving

INSTRUCTIONS

1. Toast the bread:
Toast the bread until deeply golden and crisp. Let it cool for 1 minute before assembling.

2. Prepare the avocado:
Mash the avocado with the lemon juice and black pepper until creamy but slightly chunky. Taste before adding any salt.

3. Assemble the toast:
Divide the avocado between the toasted bread. Arrange the smoked salmon loosely over the avocado.

4. Finish and serve:
Top with microgreens and chives. Add any optional toppings lightly, then serve immediately with lemon wedges, if desired.
