Bacon Quinoa Bites

INGREDIENTS

4 cups cooked Quinoa
1 1/2 cups shredded Carrot
1 1/2 cups chopped Onion
5 slices finely chopped Bacon
2 Eggs
1 tsp. natural Seasoning Blend
*including onion, garlic, celery and parsley
1 pinch Sea Salt
1 pinch Pepper
One pinch granulated Garlic
1 pinch Red Crushed Pepper

INSTRUCTIONS

1. Preheat the oven to 350°F.

2. Sauté the bacon: Over medium heat, cook the bacon in a skillet for about 10 minutes.

3. Drain excess drippings: Remove most of the bacon drippings, leaving about 2 tbsp in the skillet.

4. Cook the vegetables: Stir in the onion and carrot, then sauté for about 15 more minutes.

5. Combine ingredients: Mix all ingredients together in a large bowl until well combined.

6. Prepare the pan: Grease a muffin pan to prevent sticking.

7. Bake: Place the mixture into the muffin pan and bake for 25–30 minutes, or until the edges just start to crisp.
