Recipe Yield: 6 servings

INGREDIENTS

3 large potatoes, diced
1 1/2 (15 oz) cans white beans, drained and rinsed
1 1/2 medium onions, diced
4–5 cloves garlic, minced
3 carrots, diced
3 celery stalks, diced
1 1/2 cups diced tomatoes
6 cups vegetable broth (low sodium)
1 1/2 tbsp olive oil
1 1/2 tsp smoked paprika
3/4 tsp dried thyme
1 1/2 cups water
1 bay leaf
Salt and pepper to taste
1/3 cup chopped fresh parsley
1 lemon wedge (optional)

INSTRUCTIONS

1. Heat & Sauté: Heat the olive oil in a large pot over medium heat. Add the diced onions, carrots, celery, and garlic; sauté until soft and fragrant, about 4–5 minutes.

2. Infuse Flavors: Stir in the diced potatoes along with the smoked paprika to evenly coat the veggies and infuse a warm, smoky flavor.

3. Combine Liquids: Pour in the vegetable broth, water, and diced tomatoes, then add the bay leaf. Bring the mixture to a gentle boil.
