INGREDIENTS
2 cups Split Peas
1 large Onion, chopped
1 medium Potato, cubed
2 cups Carrot, shredded
1 tbsp Seasoning Blend
*including onion, garlic, celery and parsley
5 tbsp Olive Oil
1 tsp Sea Salt
1 pinch Pepper
10 cups of Water
INSTRUCTIONS
1. Simmer the split peas: In a medium pot, combine water and split peas. Bring to a simmer and cook for about 20 minutes.
2. Add the potatoes: Stir in the cubed potato and let it cook with the peas.
3. Sauté the aromatics: Meanwhile, in a separate skillet, heat olive oil over medium heat. Sauté the onions and shredded carrots for 15–20 minutes, stirring occasionally, until golden brown.
4. Combine and finish cooking: Add the sautéed onion and carrot mixture to the pot with the split peas. Stir in sea salt and the seasoning blend.
5. Final simmer: Continue boiling for another 15 minutes, stirring occasionally, until everything is tender and well combined.
6. Serve hot: Ladle into bowls and enjoy warm, ideally with a slice of crusty bread! For extra flavor and texture, garnish with freshly chopped parsley, crispy crumbled bacon, or a sprinkle of grated Parmesan cheese.
Helpful Tips to Perfect This Recipe
- Use Fresh, High-Quality Split Peas – Always check your split peas before cooking! Older peas take longer to soften, so using fresh, high-quality ones ensures a smoother, creamier soup. If they seem too firm after cooking, simmer a bit longer until tender.
- Sauté for Extra Depth of Flavor – Don’t rush the onions and carrots! Slowly sautéing them until golden brown enhances the soup’s natural sweetness and adds a rich, savory depth. This simple step makes all the difference in bringing out the best flavors.
- Adjust Thickness to Your Liking – If your soup turns out thicker than expected, simply add a little warm water or vegetable broth to reach your desired consistency. Prefer a creamier texture? Blend a portion of the soup before serving for a velvety finish.
