INGREDIENTS

2 cups Split Peas
1 large Onion, chopped
1 medium Potato, cubed
2 cups Carrot, shredded
1 tbsp Seasoning Blend
*including onion, garlic, celery and parsley
5 tbsp Olive Oil
1 tsp Sea Salt
1 pinch Pepper
10 cups of Water

INSTRUCTIONS

1. Simmer the split peas: In a medium pot, combine water and split peas. Bring to a simmer and cook for about 20 minutes.

2. Add the potatoes: Stir in the cubed potato and let it cook with the peas.

3. Sauté the aromatics: Meanwhile, in a separate skillet, heat olive oil over medium heat. Sauté the onions and shredded carrots for 15–20 minutes, stirring occasionally, until golden brown.

4. Combine and finish cooking: Add the sautéed onion and carrot mixture to the pot with the split peas. Stir in sea salt and the seasoning blend.

5. Final simmer: Continue boiling for another 15 minutes, stirring occasionally, until everything is tender and well combined.
