INSTRUCTIONS

1. Heat the base:
In a medium saucepan, combine cranberry juice, orange juice, water, sugar, and orange zest. Bring to a gentle simmer, stirring until the sugar fully dissolves.

2. Soften the gelatin:
Meanwhile, in a small bowl, sprinkle the gelatin over 6 tbsp cold water. Let it bloom for 5 minutes until thickened.

3. Cook the cranberries:
Add fresh cranberries to the saucepan. Simmer for 6–8 minutes, stirring occasionally, until some berries burst and the liquid becomes a vibrant ruby color.

4. Combine mixture:
Remove the saucepan from the heat. Stir the bloomed gelatin into the hot mixture until fully dissolved. Let cool for 10–15 minutes.

5. Fill the mold:
Pour the mixture into a lightly greased 4–5 cup mold. Tap gently to remove air bubbles. Refrigerate, uncovered, for 4–6 hours or until completely set.

6. Prepare garnish:
Rinse fresh cranberries and shake off excess moisture, leaving them slightly damp. Toss with sugar until lightly coated, then let rest 5–10 minutes so the sugar adheres. Use a zester to shave thin orange curls.

7. Unmold and serve:
