Recipe Yield: 6 servings

INGREDIENTS

3 lb Yukon Gold potatoes, peeled & diced
1 ½ cups frozen peas, thawed
4 tbsp butter
3 tbsp all-purpose flour
½ cup heavy cream (warm)
2 cup whole milk (warm)
½ tsp garlic powder
½ tsp onion powder
¾ tsp salt (adjust to taste)
¼ tsp black pepper
½ cup shredded white cheddar cheese
4 slices bacon, cooked & crumbled

INSTRUCTIONS

1. Preheat & prep: Preheat oven to 375°F. Grease a 9×13-inch baking dish and set aside.

2. Cook & mash potatoes: Bring a large pot of salted water to a boil. Add diced potatoes and cook for 8-10 minutes, until just fork-tender. Drain well, then mash until smooth and creamy. Set aside.

3. Make the sauce: In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute, stirring constantly.

4. Add dairy & seasonings: Slowly whisk in warm milk and heavy cream, stirring until smooth. Cook for 3-4 minutes, or until thickened. Stir in garlic powder, onion powder, salt, and black pepper.

5. Melt the cheese: Remove sauce from heat and stir in white cheddar cheese until melted and creamy.

6. Assemble the dish: In a large bowl, combine potatoes, peas, and cheese sauce, tossing gently to coat. Transfer to the prepared baking dish, spreading evenly.

7. Bake & finish: Sprinkle crumbled bacon on top. Bake uncovered for 20-25 minutes, until golden and bubbling.
