1/3 cup finely chopped shallot, about 1 small
INSTRUCTIONS
1. Make the lemon vinaigrette:
Whisk 1/3 cup olive oil, lemon juice, lemon zest, Dijon mustard, honey, garlic, oregano, 3/4 tsp salt, and black pepper in a large bowl. Stir in the shallot, transfer 2 tbsp vinaigrette to a small bowl, and let both rest while the orzo cooks.
2. Cook and dress the orzo:
Cook the orzo in well-salted boiling water until firm and al dente, checking it 1 minute before the package time. Drain immediately without rinsing, then toss the warm orzo with the vinaigrette in the large bowl.
3. Cool the orzo:
Spread the dressed orzo in a shallow layer on a rimmed baking sheet or large platter. Let it cool for about 15 minutes, gently tossing once halfway through to keep the orzo separate.
4. Cook the zucchini:
