4 boneless center-cut pork chops, about 1 inch thick, 5–6 oz each
1 (5.2-oz) package Boursin Garlic & Fine Herbs cheese
¼ cup heavy cream
¾ cup low-sodium chicken broth, plus more as needed
1 tsp Dijon mustard
1 small shallot, finely chopped
2 garlic cloves, minced
½ tsp kosher salt
½ tsp freshly ground black pepper
½ tsp garlic powder
½ tsp dried thyme
1 tbsp olive oil
1 tbsp unsalted butter
1 tsp fresh lemon juice
2 tbsp finely chopped fresh parsley

INSTRUCTIONS

1. Season the pork chops:
Pat the pork chops very dry. Season both sides evenly with salt, black pepper, garlic powder, and thyme.

2. Sear until golden:
Heat olive oil in a large skillet over medium-high heat. Once hot, add the pork chops in a single layer. Sear for about 3 minutes on the first side and 2–3 minutes on the second, until deeply golden. Transfer to a plate.

3. Build the skillet sauce:
Reduce the heat to medium. Add butter and shallot, then cook for 2–3 minutes until softened. Add garlic and cook for 30 seconds. Pour in chicken broth and Dijon, scraping up the browned bits. Simmer for 2 minutes.

4. Make it creamy:
Reduce the heat to low. Add the Boursin and heavy cream, stirring until completely smooth. Gently simmer for 1–2 minutes, then stir in the lemon juice.

5. Finish the pork chops:
