Smothered Chicken and Rice brings deeply golden chicken thighs, fluffy seasoned rice, and a silky garlic-herb cream sauce together in one seriously comforting dinner. The chicken is first seared until beautifully browned, then finished in the oven so it stays juicy without losing that irresistible color.
Meanwhile, simple long-grain rice cooks in chicken broth for extra savory flavor. The real finishing touch is the scratch-made pan sauce. Onion, garlic, thyme, Parmesan, and a hint of Dijon turn the flavorful skillet drippings into a rich, creamy gravy without relying on canned soup.
Spoon that warm herb sauce over the chicken and let a little wander into the rice underneath. It feels cozy and generous, yet the fresh herbs and touch of lemon keep every bite balanced. Best of all, each component is straightforward enough for an easy family dinner while still looking special at the table.

Recipe Yield: 6 servings
INGREDIENTS
Chicken:
6 bone-in, skin-on chicken thighs, about 3 lb
1 1/4 tsp kosher salt
1 1/2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1 tbsp olive oil
Rice:
1 1/2 cups long-grain white rice, rinsed and well drained
1 tbsp unsalted butter
2 1/4 cups low-sodium chicken broth
1/4 tsp kosher salt
Garlic herb sauce:
1 cup low-sodium chicken broth
1 cup heavy cream
1 tsp Dijon mustard
1 tbsp unsalted butter
1 small yellow onion, finely chopped
4 garlic cloves, minced
2 tbsp all-purpose flour
1/2 tsp dried thyme
1/4 tsp black pepper
1/3 cup finely grated Parmesan cheese
2 tbsp chopped fresh parsley, plus more for serving
1 tbsp chopped fresh chives, plus more for serving
1 tsp fresh lemon juice
Kosher salt, to taste
INSTRUCTIONS
1. Season the chicken:
Preheat the oven to 425°F and line a rimmed baking sheet with parchment paper. Pat the chicken very dry, then season evenly with salt, paprika, garlic powder, onion powder, and black pepper.
2. Sear until deeply golden:
Heat olive oil in a large skillet over medium to medium-high heat. Add chicken skin-side down without crowding the skillet and cook undisturbed for 7–9 minutes, until deeply golden and it releases easily. Work in two batches if needed. Flip and cook for 2 minutes more.
3. Finish the chicken:
Transfer chicken skin-side up to the prepared baking sheet. Roast until the thickest part reaches at least 165°F, usually 18–24 minutes. Begin checking at 18 minutes, then rest for 5 minutes.
4. Cook the rice:
Meanwhile, melt butter in a medium saucepan over medium heat. Stir in rice and cook for 1 minute. Add chicken broth and salt, then bring to a boil. Cover, reduce heat to low, and cook for 15–17 minutes, until the liquid is absorbed. Remove from heat, rest covered for 5 minutes, then fluff with a fork.
5. Build the pan sauce:
Carefully drain excess fat from the chicken skillet, leaving about 1 tbsp along with the browned bits. Add butter and onion over medium heat. Cook for 3–4 minutes until softened, then add garlic and cook for 30 seconds.
6. Make the garlic herb gravy:
Stir in flour and cook for 1 minute. Gradually whisk in chicken broth, followed by heavy cream, Dijon, thyme, and black pepper. Bring to a gentle simmer and cook for 3–4 minutes, stirring often, until lightly thickened.
7. Finish and serve:
Reduce heat to low and stir in Parmesan until melted and smooth. Remove from heat, then stir in parsley, chives, lemon juice, and any resting juices from the chicken. Taste and season with salt if needed. Serve the chicken over fluffy rice with plenty of warm garlic herb sauce spooned over the top.
Helpful Tips to Perfect This Recipe
- Give the chicken room to brown: Crowding traps steam and prevents that deeply golden finish. If all six thighs do not fit comfortably, searing in two batches is absolutely worth the extra few minutes.
- Let the chicken release naturally: If the skin still grips the skillet, leave it alone a little longer. Properly browned chicken releases much more easily and keeps its skin intact.
- Keep the gravy gently simmering: Heavy cream and Parmesan prefer moderate heat. A gentle simmer creates a smooth sauce without reducing it too aggressively.
- Adjust the sauce before serving: The gravy naturally thickens as it stands. If needed, whisk in 1–2 tbsp warm chicken broth until it returns to a silky, spoonable consistency.
- Give the rice its covered rest: Those final 5 minutes let the steam finish the grains evenly, helping the rice stay fluffy beneath the creamy sauce.
