Buffalo Chicken Celery Sticks are a fresh, crunchy appetizer with creamy buffalo chicken filling and plenty of bold flavor.

Buffalo Chicken Celery Sticks turn everything people love about buffalo chicken into a cool, crunchy appetizer made for easy snacking. Crisp celery is generously filled with creamy shredded chicken, tangy buffalo sauce, sharp cheddar, scallions, and fresh chives. Greek yogurt lightens the filling while cream cheese gives it just enough richness to stay beautifully mounded in every celery stick.

The filling comes together in minutes with cooked chicken, making this an especially handy recipe for entertaining or using leftovers. It can also be prepared ahead and chilled until serving time.

The contrast makes every bite work: fresh celery, savory chicken, creamy cheese, bright buffalo heat, and a little smoky seasoning underneath. Serve these as an easy party appetizer, satisfying snack, or simple light lunch when buffalo chicken cravings hit.

Recipe Yield: 8 servings

INGREDIENTS

8 large celery stalks, trimmed and cut into 3-inch pieces
2 cups finely shredded cooked chicken, cooled
1/3 cup finely shredded sharp cheddar cheese
4 oz cream cheese, softened
1/4 cup plain whole-milk Greek yogurt
1/3 cup buffalo wing sauce, plus more for drizzling
3 tbsp thinly sliced green onions
1 tsp fresh lemon juice
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp smoked paprika
1/4 tsp black pepper
2 tbsp finely chopped fresh chives, divided

INSTRUCTIONS

1. Prepare the celery:
Wash and dry the celery thoroughly. Trim the ends, then cut crosswise into approximately 3-inch pieces.

2. Make the buffalo mixture:
Stir the softened cream cheese until smooth. Add the Greek yogurt and mix until creamy, then stir in the buffalo sauce, lemon juice, garlic powder, onion powder, smoked paprika, and black pepper.

3. Add the chicken:
Fold in the shredded chicken, cheddar, green onions, and 1 tbsp chives until evenly coated and well combined.

4. Fill the celery:
Spoon 1–2 tbsp buffalo chicken mixture into each celery piece, depending on its size, and mound the filling generously.

5. Finish and serve:
Top with the remaining chives and, if preferred, a light drizzle of buffalo sauce. Serve immediately or refrigerate until ready to enjoy.

Helpful Tips to Perfect This Recipe

  • Dry the celery completely: Water inside the celery grooves can loosen the filling and cause it to slide. Pat the stalks thoroughly dry before filling.
  • Use finely shredded, cooled chicken: Small pieces blend into the creamy buffalo filling more evenly and make each celery stick much easier to eat.
  • Soften, but don’t warm, the cream cheese: Properly softened cream cheese mixes smoothly without making the filling loose. If the mixture becomes very soft, chill it briefly before filling the celery.
  • Prepare the filling ahead: Make the buffalo chicken mixture up to 2 days ahead and refrigerate it separately. Fill the celery shortly before serving for the freshest crunch.
