INGREDIENTS

3 cups fresh corn kernels, from about 4 large ears, or thawed frozen corn, patted very dry
1 large English cucumber, halved lengthwise and sliced ⅓-inch thick
5 radishes, thinly sliced
⅓ cup thinly sliced red onion
½ cup chopped fresh cilantro

Dressing:
4 tbsp extra-virgin olive oil, divided
2½ tbsp fresh lime juice, plus more to taste
1 tsp finely grated lime zest
2 tsp honey
1 tsp Dijon mustard
1 small garlic clove, finely grated
½ tsp ground cumin
¼ tsp smoked paprika
¾ tsp kosher salt, divided
¼ tsp black pepper

INSTRUCTIONS

1. Char the corn:
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the corn in an even layer and cook for 5–7 minutes, stirring occasionally, until lightly blistered but still plump. Season with ¼ tsp salt during the final minute, then spread on a plate and cool for 10 minutes.

2. Make the dressing:
Whisk the remaining 3 tbsp olive oil, lime juice, lime zest, honey, Dijon mustard, garlic, cumin, smoked paprika, remaining ½ tsp salt, and black pepper in a large bowl. Stir in the red onion and let it marinate for 10 minutes.

3. Assemble the salad:
Add the cooled corn, cucumber, radishes, and cilantro to the bowl. Toss gently until everything is evenly coated.

4. Finish and serve:
Let the salad rest for 5 minutes, then toss once more. Taste and adjust with additional lime juice or salt before serving.

  • Keep the corn dry and spread out. Moisture or an overcrowded skillet will steam the kernels. A wide skillet helps them develop lightly charred edges while staying crisp and juicy.
