The pork chops cook first, leaving plenty of browned flavor behind for the sauce. Full-fat coconut milk goes straight into the same skillet with fresh ginger and lime, then simmers just long enough to become glossy enough to cling to the pork.

The finishing crunch comes from thin shallot rings and unsweetened coconut flakes toasted until deeply golden. Add scallions, cilantro, and fresh lime zest right before serving for a dinner that feels fresh and modern while still being easy enough for a weeknight.

INGREDIENTS

4 boneless pork loin chops, 1-inch thick
2 medium shallots, thinly sliced into rings
1/3 cup unsweetened coconut flakes
1 tbsp finely grated fresh ginger
3 garlic cloves, finely minced
1 cup full-fat unsweetened coconut milk
1 tbsp low-sodium soy sauce
1 1/4 tsp kosher salt, divided
1/2 tsp black pepper
1/2 tsp garlic powder
3 tbsp avocado oil, divided
2 tsp honey
1 tsp Dijon mustard
1 large lime
2 scallions, thinly sliced
2 tbsp chopped fresh cilantro

INSTRUCTIONS

1. Season the pork:
Pat the pork chops very dry. Season both sides with 1 tsp salt, black pepper, and garlic powder.

2. Crisp the shallots:
Heat 2 tbsp avocado oil in a large skillet over medium heat. Add the shallots and cook for 4–6 minutes, stirring frequently, until golden and crisp. Transfer with a slotted spoon to a paper towel-lined plate and season with a small pinch of the remaining salt.

3. Toast the coconut:
Reduce the heat to medium-low. Add the coconut flakes to the remaining oil in the skillet and cook for 1–2 minutes, stirring constantly, until golden. Transfer to the plate with the shallots.

4. Sear the pork:
Remove any loose coconut flakes from the skillet. Add the remaining 1 tbsp avocado oil and heat over medium-high. Add the pork chops and cook for 4–5 minutes on the first side until deeply golden.

5. Finish the pork:
Turn the chops and cook for another 3–5 minutes, until the thickest part reaches 145°F. Transfer to a clean plate and rest for at least 3 minutes while preparing the sauce.

6. Add the aromatics:
Reduce the heat to medium-low. Add the ginger and garlic to the skillet and cook for 30 seconds, stirring constantly.

7. Build the coconut sauce:
Add the coconut milk, soy sauce, honey, Dijon, and remaining 1/4 tsp salt. Bring to a gentle simmer, scraping the browned bits from the bottom of the skillet.

8. Reduce the sauce:
Simmer gently for 4–5 minutes, stirring occasionally, until the sauce is slightly reduced and silky enough to lightly coat a spoon.

9. Add the lime:
Finely zest the lime, then squeeze 1 1/2 tbsp juice. Remove the skillet from the heat and stir the lime juice and half of the zest into the coconut sauce.

10. Finish and serve:
Return the pork chops and any collected juices to the skillet, spooning the coconut-lime sauce over the top. Finish with the crispy shallots, toasted coconut, scallions, cilantro, and remaining lime zest. Serve immediately.
