INGREDIENTS

3 (5-oz) cans solid tuna in water, drained and gently pressed dry
1 1/2 cups sushi rice
1 cup frozen shelled edamame, cooked according to package directions and cooled
1 medium English cucumber, thinly sliced
1 large carrot, julienned
2 medium avocados, sliced
1/4 cup pickled ginger
3 scallions, thinly sliced and divided
4 roasted nori sheets, divided
1/2 cup mayonnaise
1/2 cup panko breadcrumbs
2 1/2 tbsp unseasoned rice vinegar
1 tbsp granulated sugar
3/4 tsp kosher salt
1 tbsp avocado oil or other neutral oil
1 tbsp sesame seeds
1 1/2 tbsp sriracha
1 tbsp reduced-sodium soy sauce
2 tsp unseasoned rice vinegar
1 tsp honey
1 tsp toasted sesame oil
1 tsp finely grated fresh ginger
1 3/4 cups water
2 tsp water

INSTRUCTIONS

1. Cook the rice:
Rinse the rice under cool water until the water runs mostly clear. Drain well, then combine it with 1 3/4 cups water in a medium saucepan. Bring to a boil, cover, and reduce the heat to low. Cook for 15 minutes, then remove from the heat and rest covered for 10 minutes.

2. Season the rice:
Combine 2 1/2 tbsp rice vinegar, the sugar, and salt in a small microwave-safe bowl. Microwave for 15–20 seconds, then stir until completely dissolved. Gently fold the mixture into the hot rice. Let the rice cool uncovered for 10 minutes.

3. Make the sesame crunch:
Heat the avocado oil in a skillet over medium-low heat. Add the panko and cook for 2–3 minutes, stirring frequently. Add the sesame seeds and cook for 1 minute more, until everything is evenly golden. Remove from the heat, then crumble in one nori sheet.

4. Prepare the spicy sauce:
Whisk the mayonnaise, sriracha, soy sauce, 2 tsp rice vinegar, honey, sesame oil, and ginger until smooth. Reserve 1/4 cup for serving, then whisk the water into the reserved sauce to create a drizzling consistency.

5. Mix the tuna:
Gently fold the well-drained tuna and half the scallions into the remaining spicy sauce. Keep some larger tuna flakes intact for the best texture.

6. Assemble the bowls:
Divide the seasoned rice among four bowls. Arrange the tuna, edamame, cucumber, carrot, avocado, and pickled ginger over the rice. Cut the remaining nori sheets into thin strips and scatter them on top.

7. Finish and serve:
Spoon the sesame crunch over each bowl immediately before serving. Finish with the remaining scallions and a generous drizzle of the reserved spicy sauce.


HELPFUL TIPS TO PERFECT THIS RECIPE

  • Remove excess tuna moisture: Press the drained tuna gently against the strainer. Watery tuna can dilute the sauce and make the mixture loose.
  • Keep the vegetables crisp: Let the rice cool until pleasantly warm before assembling. Very hot rice can soften the cucumber and discolor the avocado.
  • Toast over moderate heat: Panko and sesame seeds can brown quickly. Medium-low heat creates an even golden crunch without scorching the seeds.
