Honey-Lime Peach Salsa Chicken is bright, juicy, and full of fresh summer flavor without feeling complicated. The chicken gets a quick honey-lime marinade with garlic, Dijon, smoked paprika, and a touch of chili powder for savory depth. Then, it cooks until tender and lightly charred before getting topped with fresh peach salsa that is sweet, tangy, crisp, and gently spicy.
This is the kind of recipe that looks special but still feels weeknight-friendly. The peaches bring natural sweetness, while lime, jalapeño, red onion, cilantro, and mint keep every bite balanced. Plus, the colorful salsa makes the whole plate feel fresh and beautiful with very little effort. Serve it with rice, salad, grilled vegetables, or warm tortillas for a simple dinner that feels sunny, modern, and completely satisfying.

Recipe Yield: 4 servings
INGREDIENTS
4 boneless, skinless chicken breasts, about 6 oz each
2 garlic cloves, finely grated
1 tsp kosher salt, divided
3/4 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp black pepper, divided
3 ripe but firm peaches, diced
1/3 cup finely diced red onion
1/3 cup finely diced red bell pepper
1 small jalapeño, seeded and finely diced
1/3 cup chopped fresh cilantro
1 tbsp finely chopped fresh mint
1 tsp lime zest
2 tbsp olive oil
3 tbsp fresh lime juice, divided
1 tbsp plus 2 tsp honey, divided
2 tsp Dijon mustard
Lime wedges, for serving
INSTRUCTIONS
1. Prepare the chicken:
Pat the chicken dry. Then, lightly pound the thicker ends so each piece is an even 3/4-inch thickness.
2. Marinate the chicken:
Whisk together the olive oil, 2 tbsp lime juice, 1 tbsp honey, Dijon mustard, garlic, 1/2 tsp salt, smoked paprika, chili powder, and 1/4 tsp black pepper. Coat the chicken evenly and let it rest for 20 to 30 minutes.
3. Make the peach salsa:
Meanwhile, combine the peaches, red onion, red bell pepper, jalapeño, cilantro, mint, lime zest, remaining 1 tbsp lime juice, remaining 2 tsp honey, remaining 1/2 tsp salt, and remaining 1/4 tsp black pepper. Toss gently and set aside.
4. Heat the grill:
Preheat an outdoor grill or grill pan to medium-high heat. Lightly oil the grates if needed so the chicken releases easily.
5. Cook the chicken:
Grill the chicken for 4 to 6 minutes per side, or until lightly charred and the thickest part reaches 165°F. Lower the heat slightly if the honey begins to darken too quickly.
6. Rest and serve:
Transfer the chicken to a plate and rest for 5 minutes. Spoon the peach salsa over the top and serve with lime wedges.
HELPFUL TIPS TO PERFECT THIS RECIPE
- Use firm-ripe peaches: Soft peaches can turn watery or mushy once tossed with lime and salt. For the best peach salsa chicken, choose peaches that smell sweet but still hold their shape when diced.
- Even thickness matters: Chicken breasts cook much more reliably when the thicker ends are lightly pounded. This helps the chicken stay juicy instead of drying out while the center finishes cooking.
- Keep the salsa fresh: Let the peach salsa sit for 10 to 15 minutes so the flavors blend. However, add it right before serving so the peaches, herbs, and vegetables stay bright.
- Watch the grill heat: Since the marinade includes honey, medium-high heat gives the chicken good color without burning. If the outside browns too fast, lower the heat and finish gently.
