INGREDIENTS

10 large eggs
6 slices regular-cut bacon, chopped
1 cup shredded sharp cheddar cheese, divided
⅓ cup whole milk
¼ cup sour cream
1 tsp Dijon mustard
½ tsp garlic powder
¼ tsp smoked paprika
¼ tsp kosher salt
¼ tsp black pepper
¼ cup thinly sliced scallions, divided
1 tbsp finely chopped fresh chives, optional
Nonstick cooking spray

INSTRUCTIONS

1. Prepare the muffin pan:
Preheat the oven to 350°F. Generously coat a standard 12-cup muffin pan with nonstick cooking spray, including the upper edges of each cup.

2. Cook the bacon:
Cook the chopped bacon in a skillet over medium heat until browned and just crisp, about 7–9 minutes. Transfer it to a paper towel-lined plate and drain well.

3. Make the egg mixture:
Whisk the milk, sour cream, Dijon mustard, garlic powder, smoked paprika, salt, and black pepper until smooth. Add the eggs and whisk just until evenly combined without making the mixture frothy.

4. Assemble the egg muffins:
Reserve a little bacon, cheddar, and scallion for the tops. Divide the remaining bacon, cheese, and scallions evenly among the prepared muffin cups. Pour in the egg mixture, filling each cup about three-quarters full.

5. Add the toppings:
Sprinkle the reserved bacon, cheddar, and scallions evenly over the egg mixture.

6. Bake the muffins:
Bake for 22–25 minutes, until the muffins are puffed, the centers are completely set, and the eggs reach 160°F. Avoid baking until deeply browned, which can make the eggs firm or rubbery.

7. Cool and serve:
Let the muffins rest in the pan for 5 minutes. Run a thin knife around the edges, gently lift them out, and finish with chopped chives if desired.
