2 everything bagels, sliced
2 tsp butter, softened
2 oz cream cheese, softened
1 large ripe avocado
1 tsp fresh lemon juice
1 tbsp chopped fresh chives, plus more for topping
1/8 tsp garlic powder
1/4 tsp salt, divided
1/8 tsp black pepper, divided
1/8 tsp red pepper flakes, optional
2 large eggs
1 tsp olive oil
1 tsp water
1 tsp everything bagel seasoning, optional

INSTRUCTIONS

1. Toast the bagels:
Spread the cut sides of each bagel lightly with butter. Then, toast until golden, crisp, and warm.

2. Make the avocado spread:
In a small bowl, mash the avocado with lemon juice, chives, garlic powder, 1/8 tsp salt, 1/8 tsp black pepper, and red pepper flakes until creamy but still slightly chunky.

3. Cook the eggs:
Heat olive oil in a nonstick skillet over medium heat. Add the eggs and cook for 2 minutes, or until the edges are set. Then, add water around the eggs, cover, and cook for 30 to 60 seconds more, until the whites are fully set and the yolks are cooked to your liking.
