These Air Fryer Steak Bites have deeply browned edges, juicy centers, and an irresistible garlic balsamic butter coating. Even better, they deliver bold steakhouse flavor without heating a grill or standing over a hot skillet.
The signature sauce makes this recipe especially memorable. Worcestershire sauce adds savory depth, while Dijon mustard, balsamic vinegar, and a touch of honey create a rich, glossy finish. Meanwhile, smoked paprika adds warmth without hiding the natural flavor of the steak.
Serve these easy steak bites with mashed potatoes, roasted vegetables, rice, pasta, or warm crusty bread. They are quick enough for a weeknight dinner, yet impressive enough for entertaining.

Recipe Yield: 4 servings
INGREDIENTS
1½ lb top sirloin steak, trimmed and cut into 1¼-inch cubes
1 tbsp avocado oil
1 tsp smoked paprika
1 tsp garlic powder
¾ tsp onion powder
1 tsp kosher salt
½ tsp black pepper
¼ tsp crushed red pepper flakes, optional
3 tbsp unsalted butter
4 garlic cloves, finely minced
1 tbsp Worcestershire sauce
2 tsp balsamic vinegar
1½ tsp Dijon mustard
1 tsp honey
1 tbsp finely chopped fresh parsley
Optional Creamy Honey Dijon Dip
¼ cup mayonnaise
1½ tbsp Dijon mustard
2 tsp honey
½ tsp Worcestershire sauce
¼ tsp garlic powder
Pinch of black pepper
INSTRUCTIONS
1. Preheat the air fryer:
Preheat the air fryer to 400°F for 4 minutes. A thoroughly heated basket helps the steak begin browning as soon as it goes inside.
2. Dry and season the steak:
Pat the steak cubes very dry with paper towels. Then, place them in a large bowl with the avocado oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Toss until every piece is evenly coated.
3. Arrange the steak bites:
Place the steak cubes in the hot air fryer basket in a single, uncrowded layer. Leave a little space between the pieces so hot air can circulate. Depending on the basket size, divide the steak into two batches.
4. Air fry the steak:
Air fry for 6–9 minutes, turning or shaking the steak after 4 minutes. Begin checking the largest pieces at 6 minutes with an instant-read thermometer. Aim for 125–130°F for medium-rare, 135–140°F for medium, or 145°F for a firmer result. Since the small pieces cook quickly, remove them as soon as they reach the preferred temperature.
5. Make the garlic balsamic butter:
Meanwhile, melt the butter in a small skillet over medium-low heat. Add the garlic and cook for 30–45 seconds, stirring constantly, until fragrant but not browned. Next, reduce the heat to low and whisk in the Worcestershire sauce, balsamic vinegar, Dijon mustard, and honey. Cook for 30 seconds, just until warm, glossy, and combined. Do not boil the sauce.
6. Glaze the steak bites:
Transfer each cooked batch to a large heat-safe bowl. Once all the steak is ready, pour the warm garlic balsamic butter over the bites. Then, toss gently until every piece is evenly coated.
7. Make the dipping sauce, optional:
Whisk the mayonnaise, Dijon mustard, honey, Worcestershire sauce, garlic powder, and black pepper until smooth.
8. Rest and serve:
Let the steak bites rest in the garlic balsamic butter for 3 minutes. Then, sprinkle with fresh parsley and serve immediately with the remaining sauce and optional Creamy Honey Dijon Dip alongside.
HELPFUL TIPS TO PERFECT THIS RECIPE
- Dry the steak thoroughly: Excess surface moisture creates steam, while very dry steak develops deeper browning and better caramelized edges.
- Cook by temperature, not time alone: Air fryer models vary, so an instant-read thermometer gives you juicy, perfectly cooked steak bites every time.
- Keep the garlic butter over low heat: Gentle heat prevents the garlic from burning and keeps the balsamic Dijon butter smooth, glossy, and flavorful.
