INGREDIENTS

1 bag (24 oz) frozen chicken potstickers
1 bag (20–24 oz) frozen pork or vegetable dumplings
1 cup shredded mozzarella cheese
¾ cup shredded Monterey Jack cheese
⅓ cup grated parmesan cheese
2 green onions, thinly sliced
1 small yellow onion, finely diced
4 garlic cloves, minced
1 tbsp fresh ginger, grated
2 tbsp red curry paste
1 tbsp yellow curry powder
1 tsp smoked paprika
1 tsp kosher salt
½ tsp black pepper
1 tbsp olive oil
1 tbsp low-sodium soy sauce
1 tsp fish sauce (optional, but recommended)
1 tsp toasted sesame oil
1 tsp brown sugar
1 can (13.5 oz) full-fat coconut milk
1 cup low-sodium chicken broth
½ cup heavy cream
4 oz cream cheese, softened
1 tbsp cornstarch
2 tbsp water
2 tbsp chopped fresh cilantro (optional)
1 tsp sesame seeds (optional)
Chili crisp or red pepper flakes, for serving (optional)

INSTRUCTIONS

1. Preheat and prepare:
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.

2. Cook the aromatics:
Meanwhile, heat olive oil in a large skillet over medium heat. Add onion and cook for 4–5 minutes until softened. Stir in garlic and ginger, then cook for 30 seconds until fragrant.

3. Build the curry flavor:
Add red curry paste, curry powder, smoked paprika, salt, and pepper. Stir constantly for about 1 minute to lightly toast the spices and deepen the flavor.

4. Make the creamy sauce:
Add soy sauce, fish sauce, sesame oil, brown sugar, coconut milk, chicken broth, heavy cream, and cream cheese. Stir until smooth and creamy. Bring to a gentle simmer.

5. Thicken slightly:
In a small bowl, whisk cornstarch with water. Slowly stir it into the sauce and simmer for 2–3 minutes until slightly thickened. The sauce should feel creamy and luxurious but still pour easily.

6. Layer the dumpling lasagna:
Spread a thin layer of curry sauce in the baking dish. Arrange half of the frozen dumplings in a slightly overlapping layer. Spoon over more sauce and sprinkle with half of the mozzarella and Monterey Jack. Repeat with remaining dumplings and sauce, making sure most dumplings are lightly coated.

7. Add the topping:
Sprinkle parmesan evenly over the top, followed by the remaining mozzarella and Monterey Jack for a creamy, golden finish.

8. Bake until bubbly:
Cover loosely with foil and bake for 35 minutes. Then remove foil and bake for another 12–15 minutes until bubbling around the edges, lightly golden, and the dumplings are fully heated through.

9. Rest and garnish:
Let the bake rest for 10 minutes before serving. Finish with green onions, cilantro, sesame seeds, and a small drizzle of chili crisp if desired.
