1 lb 90% lean ground beef
1/2 medium yellow onion, finely chopped
2 garlic cloves, minced
1 tbsp tomato paste
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp kosher salt
1/4 tsp black pepper
For the bowls:
3 cups warm cooked jasmine rice
4 large eggs
1 cup whole-milk cottage cheese
2 small ripe avocados, diced
1 tbsp fresh lime juice
1/4 tsp kosher salt
2 tbsp finely chopped fresh cilantro
1 tbsp butter or olive oil
2 tbsp thinly sliced green onions
1 lime, cut into wedges
INSTRUCTIONS
1. Prepare the oven and glaze:
Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper. Whisk the honey, hot sauce, vinegar, and Worcestershire together. Reserve 1 1/2 tbsp for serving.
2. Roast the sweet potatoes:
Toss the sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them apart in one layer. Roast for 22 to 26 minutes, turning halfway, until tender with browned edges.
3. Season the rice:

7. Assemble the bowls:
Divide the cilantro-lime rice among four bowls. Arrange the roasted sweet potatoes, hot honey beef, cottage cheese, diced avocado, and fried eggs on top. Drizzle with the reserved glaze, then finish with green onions and lime wedges.
