Recipe Yield: 10 mini burritos

INGREDIENTS

10 mini flour tortillas (street taco size)
6 large eggs
8 oz. breakfast sausage
1¼ cup frozen diced hash browns
1¼ cup shredded sharp cheddar cheese
2 Tbsp milk
2 oz. cream cheese, softened
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder, divided
¼ tsp smoked paprika
1 Tbsp butter
2 Tbsp chopped green onions
1 Tbsp melted butter or olive oil spray

Optional for serving: salsa, hot sauce, sour cream, avocado

INSTRUCTIONS

1. Cook the sausage:
Heat a skillet over medium heat. Add breakfast sausage and cook for 5–6 minutes, breaking it apart until browned and fully cooked. Transfer to a paper towel-lined plate, leaving about 1 tsp drippings in the skillet for extra flavor.

2. Crisp the potatoes:
Add frozen hash browns to the skillet. Sprinkle with ¼ tsp garlic powder and smoked paprika, then cook for 7–8 minutes, stirring occasionally, until golden and lightly crispy. Remove from heat.

3. Make fluffy scrambled eggs:
Meanwhile, whisk eggs, milk, softened cream cheese, salt, pepper, and remaining ¼ tsp garlic powder until smooth. Melt butter in a nonstick skillet over medium-low heat. Add eggs and gently stir often for 3–4 minutes until softly scrambled and still slightly glossy. Remove from heat immediately so they stay fluffy.

4. Mix the filling:
In a large bowl, combine sausage, crispy potatoes, scrambled eggs, cheddar cheese, and green onions. Stir gently until evenly mixed. Let cool for 5 minutes so the cheese doesn’t melt too quickly while rolling.

5. Warm the tortillas:
Microwave tortillas for 10–15 seconds under a damp paper towel. This helps prevent cracking and makes rolling much easier.

6. Roll the burritos:
Add about ¼ cup filling to the center of each tortilla. Fold in the sides, then roll tightly into mini burritos. Place seam-side down and gently press for a few seconds to help seal.

7. Air fry until crispy:
Preheat air fryer to 375°F. Lightly brush burritos with melted butter or spray with olive oil. Arrange seam-side down in a single layer and cook for 8–10 minutes, flipping halfway through, until deeply golden and crisp.

8. Serve and enjoy:
