Recipe Yield: 6 servings

INGREDIENTS

1 ½ lbs chicken tenders
12 oz fettuccine pasta
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tbsp Cajun seasoning
1 tsp smoked paprika
5 tbsp unsalted butter, divided
4 cloves garlic, minced
⅓ cup honey
1 tbsp hot sauce
¾ cup chicken broth
¼ tsp crushed red pepper flakes
1 tsp fresh lemon juice
2 tbsp chopped fresh parsley
¼ cup grated Parmesan cheese, plus more for serving

INSTRUCTIONS

1. Cook the pasta:
Bring a large pot of salted water to a boil. Cook the fettuccine until al dente according to package directions. Reserve 1 cup pasta water, then drain.

2. Season the chicken:
Pat the chicken dry with paper towels. Toss with salt, black pepper, Cajun seasoning, and smoked paprika until evenly coated.

3. Sear the chicken:
Meanwhile, heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 3–4 minutes per side until golden brown and the thickest piece reaches an internal temperature of 165°F (74°C). Transfer to a plate.

4. Build the sauce:
Reduce the heat to medium. Add the remaining 4 tbsp butter to the skillet. Once melted, stir in the garlic and cook for about 30 seconds until fragrant. Add the honey, hot sauce, chicken broth, crushed red pepper flakes, and lemon juice. Stir well and bring to a gentle simmer.

5. Glaze the chicken:
Return the chicken to the skillet and spoon the sauce over the top. Cook for 2–3 minutes, allowing the sauce to reduce slightly and coat the chicken.

6. Finish the pasta:
Add the cooked fettuccine and Parmesan cheese to the skillet. Toss until evenly coated. If needed, add a few tablespoons of reserved pasta water until the sauce becomes silky and lightly clings to the noodles.

7. Garnish and serve:
Sprinkle with fresh parsley and additional Parmesan. Serve immediately while hot, glossy, and coated in the spicy Cajun honey butter sauce.

HELPFUL TIPS TO PERFECT THIS RECIPE

  • Use freshly grated Parmesan: Pre-shredded Parmesan does not melt as smoothly and can make the sauce grainy.
  • Don’t over-reduce the sauce: The sauce should lightly coat a spoon before adding the pasta. It will continue thickening as it cools.
  • Adjust the heat your way: Cajun seasonings vary widely. Taste the sauce before serving and add extra hot sauce if you prefer more spice.
  • Finish everything in one skillet: Tossing the pasta directly in the sauce allows the noodles to absorb flavor and creates a much better texture than simply pouring sauce over the top.
