Pumpkin Chocolate Chip Oatmeal Bake

Pumpkin Chocolate Chip Oatmeal Bake cut into nine squares in a white 8x8 baking dish with lemon tea and pumpkin wedges.
Warm Pumpkin Chocolate Chip Oatmeal Bake with cozy spices, golden edges, and melted chocolate in every square.

Pumpkin Chocolate Chip Oatmeal Bake brings cozy pumpkin spice flavor to an easy breakfast that still feels special. The middle stays soft and tender, while the edges become lightly golden and chewy. Browned butter adds a warm, nutty flavor that makes the pumpkin taste richer without overwhelming it. Maple syrup and a little brown sugar provide balanced sweetness. Meanwhile, pockets of melted chocolate make every square feel like a treat.

This baked oatmeal uses one mixing bowl and rests briefly before baking. That small step helps the oats absorb the creamy pumpkin mixture, creating a moist, sliceable texture instead of a dry or crumbly bake. Serve it warm for breakfast, add Greek yogurt for brunch, or tuck a square into a lunchbox. It also reheats beautifully, making busy mornings easier without giving up something homemade.

Recipe Yield: 9 servings

INGREDIENTS

2 1/2 cups old-fashioned rolled oats
1 cup pumpkin puree, not pumpkin pie filling
2 large eggs
5 tbsp unsalted butter, plus more for greasing
1 1/4 cups whole milk
1/4 cup pure maple syrup
2 tbsp packed light brown sugar
2 tsp vanilla extract
1 1/2 tsp pumpkin pie spice
1/2 tsp ground cinnamon
1 tsp baking powder
1/2 tsp fine sea salt
3/4 cup semisweet chocolate chips, divided

INSTRUCTIONS

1. Preheat and prepare:
Preheat oven to 350°F. Lightly butter an 8×8-inch baking dish.

2. Brown the butter:
Melt the butter in a small saucepan over medium heat. Cook for 3–5 minutes, stirring often, until golden flecks appear and it smells nutty. Immediately remove from the heat and cool for 5 minutes.

3. Mix the pumpkin base:
In a large bowl, whisk the pumpkin, eggs, milk, maple syrup, brown sugar, vanilla, and browned butter until smooth.

4. Add the seasonings:
Whisk in the pumpkin pie spice, cinnamon, baking powder, and salt until evenly combined.

5. Add the oats and chocolate:
Stir in the oats and 1/2 cup chocolate chips until everything is evenly coated.

6. Rest and fill the dish:
Let the mixture rest for 10 minutes. Stir once more, spread it evenly in the prepared dish, and top with the remaining chocolate chips.

7. Bake until tender:
Bake for 38–42 minutes, until the edges are lightly golden, the center is set without looking wet, and an instant-read thermometer inserted in the center registers at least 160°F.

8. Cool and serve:
Cool for at least 15 minutes before cutting into squares. Serve warm or at room temperature.

Helpful Tips to Perfect This Recipe

  • Use pure pumpkin puree: Pumpkin pie filling contains added sweeteners and spices that would change the flavor, sweetness, and final texture.
  • Save every browned butter fleck: Scrape the golden bits from the saucepan into the bowl. They hold most of the warm, nutty flavor.
  • Rest, then stir again: The short rest allows the rolled oats to absorb moisture. Stirring afterward redistributes everything for an evenly baked center.
  • Keep the middle tender: Remove the oatmeal bake once the center no longer looks wet. It will continue firming as it cools.
  • Store and reheat easily: Refrigerate covered for up to 4 days. Microwave individual squares for 20–30 seconds, adding a small splash of milk when desired.
