Brown Butter Banana Bread Brownies turn ripe bananas into soft, chewy bars with the cozy flavor of banana bread and the rich edges of a blondie. Browning the butter first adds toasted, nutty depth, while dark brown sugar gives the center a caramel-like softness. A light maple cream cheese glaze finishes each square with just enough tang and sweetness.
Unlike fluffy banana cake, these bars use very little leavening. As a result, they bake up moist and dense without becoming heavy or gummy. The batter is simple, the pan is easy to slice, and the flavor gets even better after resting. Toasted walnuts are optional, but they add a welcome crunch. Serve the brownies with coffee, bring them to a gathering, or keep a chilled square for a quiet afternoon treat. Ripe bananas rarely get such a polished second act.

Recipe Yield: 16 brownies
INGREDIENTS
For the banana bread brownies:
2 cups all-purpose flour, spooned and leveled
1 cup mashed very ripe bananas, measured after mashing, about 2–3 medium
2 large eggs, room temperature
¾ cup unsalted butter
1 cup packed dark brown sugar
¼ cup granulated sugar
2 tsp vanilla extract
1 tsp ground cinnamon
½ tsp baking powder
¾ tsp fine sea salt
½ cup finely chopped toasted walnuts, optional
For the maple cream cheese glaze:
4 oz cream cheese, softened
1¼ cups powdered sugar
2 tbsp pure maple syrup
½ tsp vanilla extract
1 pinch fine sea salt
1–2 tsp whole milk, as needed
INSTRUCTIONS
1. Preheat and prepare:
Preheat the oven to 350°F. Line a 9-inch square metal baking pan with parchment paper, leaving an overhang.
2. Brown the butter:
Melt the butter in a light-colored saucepan over medium heat. Cook for 5–7 minutes, stirring often, until golden with toasted brown flecks. Immediately pour it into a large bowl and cool for 10 minutes.
3. Mix the wet ingredients:
Whisk the brown sugar and granulated sugar into the browned butter. Add the mashed bananas, eggs, and vanilla, then whisk until smooth and glossy.
4. Finish the batter:
Whisk the flour, cinnamon, baking powder, and salt in a separate bowl. Fold the dry ingredients into the banana mixture just until combined. Fold in the walnuts, if using.
5. Bake the brownies:
Spread the thick batter evenly in the prepared pan. Bake for 34–40 minutes, until the edges are golden and a toothpick inserted near the center has moist crumbs without wet batter.
6. Cool completely:
Place the pan on a wire rack and cool completely, about 2 hours. Then, lift the brownies from the pan using the parchment overhang.
7. Make the glaze:
Beat the cream cheese until completely smooth. Add the powdered sugar, maple syrup, vanilla, and salt. Beat until creamy, adding milk 1 tsp at a time only if needed.
8. Glaze and slice:
Drizzle or spread the glaze over the cooled brownies. Let it set for 20 minutes, then slice into 16 squares.
HELPFUL TIPS TO PERFECT THIS RECIPE
- Measure the mashed banana: Use exactly 1 cup after mashing. Too much banana can make the middle gummy and extend the baking time considerably.
- Choose a metal baking pan: A light-colored 9-inch square metal pan produces the most even center and golden edges. Glass can leave the center soft while the edges continue cooking.
- Look for moist crumbs: Remove the brownies when the center is set and the toothpick shows moist crumbs but no shiny batter. They continue firming as they cool.
- Let them cool fully: These banana bread brownies need time to settle before slicing. Complete cooling also keeps the maple cream cheese glaze thick and defined.
- Refrigerate after glazing: Store covered brownies in the refrigerator for up to four days. Let them rest at room temperature for 15 minutes before serving for the softest texture.
