Blueberry Oatmeal Bars have everything a good fruit bar should: a buttery oat crust, a generous layer of jammy blueberries, and plenty of golden crumble on top. Fresh lemon brightens the berries just enough, while brown sugar gives the oatmeal layers a warm, almost caramel-like flavor.

The blueberry filling is cooked briefly before baking, which makes these bars especially reliable. Some berries soften into a thick sauce while the rest stay beautifully intact. That means plenty of fruit in every bite without a watery filling or soggy bottom.

They are simple enough for an everyday dessert, yet pretty enough to bring to brunches, picnics, or summer gatherings. Best of all, the bars slice beautifully once cooled and taste just as lovely chilled the next day.

Recipe Yield: 12 bars

INGREDIENTS

Oat Crust & Crumble
1 1/2 cups old-fashioned rolled oats
1 1/4 cups all-purpose flour
2/3 cup packed light brown sugar
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp kosher salt
12 tbsp unsalted butter, melted and slightly cooled
1 tsp vanilla extract

Blueberry Filling
3 1/2 cups fresh blueberries, divided
1/3 cup granulated sugar
1 tbsp fresh lemon juice
1 tsp finely grated lemon zest
2 tbsp cornstarch
2 tbsp water
1/2 tsp vanilla extract
1/8 tsp kosher salt

INSTRUCTIONS

1. Prepare the pan:
Preheat oven to 350°F. Line a 9-inch square baking pan with parchment paper, leaving an overhang for easy removal.

2. Make the oatmeal crumble:
Combine oats, flour, brown sugar, baking powder, cinnamon, and salt. Stir in melted butter and 1 tsp vanilla until evenly moistened and crumbly.

3. Bake the crust:
Firmly press about two-thirds of the oat mixture into the prepared pan. Bake for 12 minutes, then remove from the oven.

4. Cook the blueberries:
Meanwhile, combine 2 cups blueberries, granulated sugar, lemon juice, lemon zest, 1/2 tsp vanilla, and salt in a saucepan. Cook over medium heat for 4–5 minutes, stirring occasionally and lightly crushing some berries as they soften.

5. Thicken the filling:
Stir cornstarch and water until completely smooth. Pour into the blueberries and cook for 1–2 minutes, stirring constantly, until the filling is glossy and noticeably thickened. Remove from heat and gently fold in the remaining 1 1/2 cups blueberries.

6. Assemble the bars:
Spread the warm blueberry filling evenly over the crust. Crumble the remaining oatmeal mixture over the berries, leaving a few small pockets of blueberry filling visible.

7. Bake until golden:
Bake for 35–40 minutes, until the topping is lightly golden and the blueberry filling is visibly bubbling around the edges.

8. Cool and slice:
Cool completely in the pan for at least 2 hours. Lift out using the parchment, then cut into 12 bars.


HELPFUL TIPS TO PERFECT THIS RECIPE

  • Keep some blueberries whole: Cooking only part of the berries creates the thick, jammy base, while folding in the remaining berries gives the bars distinct blueberry pieces instead of one uniform layer.
  • Press the bottom crust firmly: Use the bottom of a measuring cup to compact it evenly. This helps the buttery oatmeal base support the generous fruit layer without crumbling when sliced.
  • Using frozen blueberries: Frozen berries can be substituted without thawing. Cook the first portion a few minutes longer until completely thawed and releasing juice, then expect the assembled bars to need about 5 additional minutes in the oven. Bake until the filling is actively bubbling at the edges.
  • Let the filling tell you when it’s ready: After adding the cornstarch slurry, it should change from loose blueberry juice to a glossy filling that visibly coats the berries. That cue is more reliable than timing alone.
  • Cool completely before cutting: The blueberry layer continues setting as it cools. For especially clean squares, refrigerate the completely cooled bars for about 30 minutes before slicing.
