Caramel Apple Overnight Oats turn a cozy caramel-apple craving into an easy make-ahead breakfast. Creamy oats are blended with Greek yogurt, warm cinnamon, vanilla, and freshly grated apple, so apple flavor runs through every spoonful. A little caramel in the oat mixture adds richness without making breakfast overly sweet.
The finishing touch is a quick skillet apple topping. Small pieces of crisp apple cook just until tender while keeping a little bite, then get layered over the chilled oats. A final caramel drizzle brings everything together. The contrast between cool, creamy oats and cinnamon-kissed apples makes this feel much more special than ordinary meal-prep oatmeal. Better yet, the jars take only minutes to assemble and are ready to grab straight from the refrigerator the next morning.

Recipe Yield: 2 servings
INGREDIENTS
1 cup old-fashioned rolled oats
1 medium crisp apple, such as Honeycrisp or Pink Lady, divided
1/2 cup plain Greek yogurt
3 tbsp caramel sauce, divided
1 tbsp pure maple syrup
3/4 cup milk
1/2 tsp ground cinnamon, divided
1/8 tsp ground nutmeg
1 tbsp chia seeds
1/8 tsp fine sea salt
1 tsp vanilla extract
1 tsp unsalted butter
1 tsp light brown sugar
INSTRUCTIONS
1. Cook the apples:
Dice half of the apple into small pieces. Melt the butter in a small skillet over medium heat, then add the diced apple, brown sugar, and 1/4 tsp cinnamon. Cook for 3–4 minutes, stirring occasionally, until lightly softened but still holding their shape. Remove from the heat and cool completely.
2. Mix the oats:
Coarsely grate the remaining apple half. In a medium bowl, stir together the oats, chia seeds, remaining 1/4 tsp cinnamon, nutmeg, and salt. Add the milk, Greek yogurt, 1 tbsp caramel sauce, maple syrup, vanilla, and grated apple. Stir until evenly combined.
3. Chill overnight:
Divide the oat mixture between two jars or containers. Spoon the cooled cinnamon apples over the top. Cover and refrigerate for at least 8 hours or overnight.
4. Finish and serve:
Before serving, stir the oats if desired and add a small splash of milk if they are thicker than preferred. Drizzle each serving with 1 tbsp of the remaining caramel sauce and enjoy chilled.
Helpful Tips to Perfect This Recipe
- Choose a crisp apple: Honeycrisp or Pink Lady works especially well because the pieces soften slightly in the skillet without becoming mushy.
- Cool the topping completely: Adding warm apples to the jars can loosen the yogurt mixture. Let them reach room temperature first for the best creamy consistency.
- Give the oats a full overnight soak: At least 8 hours gives the rolled oats and chia time to hydrate evenly, creating a creamy result without hard or overly chewy oats.
- Adjust the consistency after chilling: If the oats become thicker than preferred, stir in 1–2 tbsp milk just before serving.
- Finish with caramel at serving time: Keeping the final drizzle until morning gives the caramel its strongest flavor and creates that unmistakable caramel-apple finish.
