1/2 cup pure maple syrup
1/3 cup plain 2% or whole-milk Greek yogurt
1/4 cup refined avocado oil or another neutral oil
1 3/4 tsp ground cinnamon, divided
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
1/4 tsp ground nutmeg
2 large eggs
2 tsp vanilla extract
1 tbsp turbinado sugar
INSTRUCTIONS
1. Prepare the pan:
Preheat the oven to 350°F. Lightly grease an 8-inch square metal baking pan and line it with parchment paper, leaving overhang on two sides.
2. Hydrate the oats:
In a large bowl, whisk the eggs, maple syrup, Greek yogurt, oil, and vanilla until smooth. Stir in the oats and grated apple without squeezing out the juices. Let the mixture rest for 10 minutes.
3. Mix the dry ingredients:
Meanwhile, whisk the flour, 1 1/2 tsp cinnamon, baking powder, baking soda, salt, and nutmeg in a separate bowl.
4. Finish the batter:
Fold the dry ingredients into the apple mixture just until no dry streaks remain. Then gently fold in the walnuts. The batter should be thick but easy to spread.
5. Add the cinnamon topping:
Spread the batter evenly in the prepared pan. Mix the turbinado sugar with the remaining 1/4 tsp cinnamon, then sprinkle it evenly over the top.
6. Bake the cake:
Bake for 34–40 minutes, until the top is golden, the center springs back lightly, and a toothpick comes out with a few moist crumbs but no wet batter.
7. Cool and slice:
Cool the cake in the pan for 20 minutes. Lift it out using the parchment, then cool for at least 30 minutes before cutting into 9 squares.
