INSTRUCTIONS
1. Prepare the pan:
Preheat the oven to 325°F. Line a light-colored 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
2. Brown the butter:
Melt 6 tbsp butter in a light-colored saucepan over medium heat. Cook for 4–6 minutes, stirring or swirling often, until golden brown and nutty. Immediately pour into a mixing bowl and cool for 10 minutes.
3. Make the brownie batter:
Meanwhile, melt the remaining 6 tbsp butter with 1/2 cup chocolate chips until smooth. Cool for 5 minutes. Whisk in 1/2 cup granulated sugar, 1/4 cup brown sugar, eggs, and 1 tsp vanilla until glossy. Fold in 1/2 cup flour, cocoa powder, and 1/4 tsp salt just until combined.
4. Make the cookie dough:
Whisk the remaining 1/2 cup brown sugar and 2 tbsp granulated sugar into the browned butter. Add the egg yolk, milk, and remaining 1 tsp vanilla. Then, fold in the remaining 3/4 cup plus 2 tbsp flour, cornstarch, baking soda, and remaining 1/4 tsp salt. Fold in 1/3 cup chocolate chips.
5. Layer the loaf:
Spoon about half the brownie batter into the prepared pan. Add irregular spoonfuls of half the cookie dough. Repeat with the remaining brownie batter and cookie dough, keeping the sections naturally uneven. Gently drag a butter knife through the batter only 2–3 times. Sprinkle the remaining chocolate chips over the top.
6. Bake the loaf:
Bake for 55–65 minutes, until the cookie portions are golden and a toothpick inserted into a brownie section comes out with thick moist crumbs but no wet batter. If the top browns too quickly, loosely cover it with parchment paper during the final 10–15 minutes.
7. Cool completely:
Cool in the pan for 30 minutes. Then, lift out using the parchment and cool on a wire rack for at least 1 1/2 hours before slicing. Finish with flaky sea salt, if desired.
