Berry Vanilla Baked Yogurt

Berry Vanilla Baked Yogurt cut into nine squares with strawberries and blueberries.
Berry Vanilla Baked Yogurt pairs a creamy vanilla yogurt base with strawberries, blueberries, and a hint of lemon.

Berry Vanilla Baked Yogurt turns simple ingredients into a creamy, berry-filled treat that feels surprisingly special. It bakes gently into a soft yogurt custard with golden edges, juicy fruit, and a lightly cheesecake-like center. Whole-milk Greek yogurt provides richness and a pleasant tang, while vanilla and fresh lemon zest brighten every bite.

Everything comes together in one bowl, so the preparation stays wonderfully easy. Once thoroughly chilled, the baked yogurt becomes firm enough to cut into beautiful squares without losing its creamy consistency. Fresh strawberries and blueberries bring natural sweetness, color, and little jammy pockets throughout the top. Serve it for brunch, as a light dessert, or alongside coffee for an afternoon treat. It is polished enough for company, yet simple enough to make whenever a container of Greek yogurt needs a delicious purpose.

Recipe Yield: 9 servings

INGREDIENTS

2 ½ cups thick whole-milk plain Greek yogurt, room temperature
4 large eggs, room temperature
½ cup granulated sugar
¼ cup plus 1 tsp cornstarch, divided
2 tsp vanilla extract
1 tsp finely grated lemon zest
¼ tsp kosher salt
¾ cup fresh strawberries, hulled and cut into small wedges no thicker than ½ inch
½ cup fresh blueberries
Nonstick cooking spray

INSTRUCTIONS

1. Prepare the pan:
Preheat the oven to 350°F. Lightly spray an 8-inch square metal baking pan and line it with parchment paper, leaving overhang on two sides.

2. Prepare the berries:
Pat the strawberries and blueberries completely dry. Gently toss them with 1 tsp cornstarch and set aside.

3. Mix the yogurt base:
Whisk the sugar, remaining ¼ cup cornstarch, and salt in a large bowl. Add the Greek yogurt, vanilla, and lemon zest, then whisk until completely smooth.

4. Add the eggs:
Whisk in the eggs one at a time, mixing gently just until each egg disappears into the yogurt. Avoid whipping excess air into the batter.

5. Assemble the bake:
Pour the batter into the prepared pan and smooth the surface. Scatter the berries evenly over the top, pressing them lightly into the batter.

6. Bake until gently set:
Bake for 45–52 minutes, until the edges are lightly golden and the center jiggles gently as one piece rather than appearing wet. An instant-read thermometer inserted near the center should register 170–175°F.

7. Cool and chill:
Cool in the pan for 1 hour. Then, refrigerate uncovered until cool before covering and chilling for at least 3 hours, preferably overnight.

8. Slice and serve:
Lift the baked yogurt from the pan using the parchment paper. Let it stand for 10 minutes, then cut it into 9 squares with a clean, sharp knife.

Helpful Tips to Perfect This Recipe

  • Choose genuinely thick Greek yogurt: Whole-milk Greek yogurt produces the smoothest, richest result. If the yogurt appears loose or has visible liquid, strain it for 30 minutes before measuring.
  • Keep the berries dry and reasonably small: Large strawberry halves can release too much juice and create soft pockets. Small wedges stay attractive while baking more evenly.
  • Do not wait for a completely firm center: The baked yogurt should still wobble gently when removed from the oven. Baking until rigid can produce a grainy or slightly curdled consistency.
  • Chill before judging the result: The center will be delicate while warm. A full three-hour chill transforms it into a creamy, sliceable yogurt custard.
  • Store it properly: Refrigerate the squares in a covered container for up to four days. For the creamiest consistency, let each serving stand at room temperature for about 10 minutes.
