INGREDIENTS

Graham cracker crust:
2 cups finely crushed graham crackers
1/2 cup unsalted butter, melted
1/4 cup packed light brown sugar
1/4 tsp kosher salt

Cheesecake filling:
24 oz full-fat block cream cheese, softened
1 1/4 cups cold heavy whipping cream
1/4 cup full-fat sour cream, at room temperature
3/4 cup powdered sugar
2 tsp vanilla extract
2 tsp fresh lemon juice
1/2 tsp finely grated lemon zest
1/8 tsp kosher salt

Blueberry topping:
3 cups fresh blueberries, divided
1/2 cup granulated sugar
1 tbsp fresh lemon juice
1 tsp finely grated lemon zest
1/2 tsp vanilla extract
1/8 tsp kosher salt
1 1/2 tbsp cornstarch
2 tbsp cold water

INSTRUCTIONS

1. Make the blueberry topping:
Combine 2 cups blueberries, sugar, lemon juice, lemon zest, and salt in a medium saucepan. Cook over medium heat for 5–7 minutes, stirring occasionally, until juicy and gently bubbling. Whisk the cornstarch and cold water until smooth, then stir the mixture into the blueberries. Cook for 1–2 minutes until thick and glossy. Remove from the heat and stir in the vanilla and remaining blueberries. Transfer to a shallow bowl. Cool for 20 minutes, then cover and refrigerate until completely cold.

2. Prepare the crust:
Line the bottom of a 9-inch springform pan with parchment paper. Combine the graham cracker crumbs, brown sugar, salt, and melted butter. Press the mixture very firmly across the bottom and about 1 inch up the sides. Freeze for 20 minutes.

3. Whip the cream:
Beat the cold heavy whipping cream on medium-high speed until firm peaks hold their shape, about 3–4 minutes. Stop before the cream looks grainy, then refrigerate it while preparing the cheesecake base.

4. Make the cheesecake filling:
Beat the softened cream cheese until completely smooth, scraping the bowl as needed. Add the powdered sugar, sour cream, vanilla, lemon juice, lemon zest, and salt. Beat for 1–2 minutes until creamy and lump-free. Gently fold in the whipped cream in three additions until evenly combined.

5. Assemble the cheesecake:
Spoon the filling into the chilled crust and spread it evenly. Cover the pan without touching the filling. Refrigerate for at least 8 hours, preferably overnight for 10–12 hours, until completely firm.

6. Finish and serve:
Gently stir the cold blueberry topping, then spread it over the set cheesecake. Refrigerate for another 30 minutes. Run a thin knife around the edge before releasing the pan. Slice with a warm, clean knife and serve chilled.
