3 cups fresh blueberries
1/3 cup granulated sugar
1 tbsp plus 1 tsp cornstarch
2 tbsp fresh lemon juice
2 tbsp cold water
1/8 tsp kosher salt
Vanilla Cheesecake Cream
16 oz full-fat brick-style cream cheese, softened
3/4 cup powdered sugar
1 tbsp finely grated lemon zest
1 tbsp fresh lemon juice
2 tsp pure vanilla extract
1/4 tsp kosher salt
2 cups cold heavy whipping cream
For Assembly
1 lb fresh strawberries, hulled and divided
1 cup fresh blueberries
2 oz white chocolate bar, finely chopped
1 tsp neutral oil
INSTRUCTIONS
1. Make the blueberry filling:
Whisk the sugar, cornstarch, and salt in a medium saucepan. Add the lemon juice and water, then whisk until smooth. Stir in the blueberries.
2. Cook and cool the filling:
Cook over medium heat for 6–8 minutes, stirring often, until the berries release their juices and the mixture bubbles and thickens. Lightly mash about one-third of the berries. Simmer for 1 minute, then transfer to a shallow bowl and refrigerate until completely cold.
3. Prepare the strawberry crust:
Process the shortbread cookies and freeze-dried strawberries into fine crumbs. Add the melted butter and salt, then pulse until evenly moistened. Press firmly into a 9×13-inch dish and freeze for 20 minutes.
4. Prepare the strawberries:
Thinly slice about three-quarters of the strawberries for the filling. Halve or quarter the remaining berries for decorating. Pat all the strawberries completely dry.
5. Make the cheesecake cream:
Beat the softened cream cheese until completely smooth. Add the powdered sugar, lemon zest, lemon juice, vanilla, and salt, then beat for 1 minute. In a clean bowl, whip the cold cream to stiff peaks. Fold one-third into the cream cheese mixture, then gently fold in the remainder.
6. Build the strawberry layers:
Spread about 3 cups cheesecake cream over the chilled crust. Arrange the sliced strawberries in an even layer. Dollop another 1 cup cheesecake cream over the berries, then gently spread it evenly.
7. Add the blueberry layer:
Stir the cold blueberry filling, then spoon it evenly over the cheesecake cream. Freeze for 15 minutes, just until the surface feels set.
8. Finish and chill:
Dollop the remaining cheesecake cream across the blueberry layer. Gently spread it into an even top layer. Cover and refrigerate for at least 6 hours, preferably overnight.
9. Decorate and serve:
Microwave the white chocolate and oil in 15-second intervals, stirring until smooth. Let it cool for 2 minutes. Top the dessert with the reserved strawberries and fresh blueberries, then drizzle with white chocolate. Slice with a warm, clean knife and serve cold.
