3 large eggs, at room temperature
1/2 cup full-fat sour cream, at room temperature
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp fine sea salt
1 cup granulated sugar
1 tbsp finely grated key lime zest
1/2 cup unsalted butter, softened
1/4 cup neutral oil
1 tsp vanilla extract
3 tbsp fresh key lime juice
1 1/2 cups confectioners’ sugar
2 tbsp finely mashed fresh raspberries, measured after mashing
1 tbsp unsalted butter, melted and slightly cooled
1–2 tsp fresh key lime juice
INSTRUCTIONS
1. Prepare the pan:
Preheat the oven to 350°F (177°C). Lightly grease a 9-by-5-inch light-colored metal loaf pan and line it with parchment paper, leaving an overhang along the long sides.
2. Combine the dry ingredients:
Whisk the flour, baking powder, baking soda, and salt in a medium bowl until evenly combined.
3. Cream the butter and lime sugar:
Rub the key lime zest into the granulated sugar until fragrant. Beat the butter and lime sugar for 2–3 minutes until light and creamy. Then gradually beat in the oil until smooth.
4. Add the eggs:
Beat in the eggs one at a time, mixing just until each is incorporated. Add the vanilla and scrape down the bowl as needed.
5. Finish the batter:
Whisk the sour cream with 3 tbsp key lime juice. On low speed, add the dry ingredients in three additions, alternating with the sour cream mixture in two additions. Begin and end with the dry ingredients, then fold briefly by hand just until no flour streaks remain.
6. Bake the cake:
Spread the batter evenly in the prepared pan. Bake on the center rack for 55–65 minutes until golden and a toothpick inserted through the center comes out without wet batter. The center should reach 200–205°F (93–96°C).
7. Cool completely:
Let the cake cool in the pan for 15 minutes. Then lift it onto a wire rack and allow it to cool completely before glazing.
8. Make the raspberry glaze:
Whisk the confectioners’ sugar, mashed raspberries, melted butter, and 1 tsp key lime juice until thick and creamy. Add the remaining juice a few drops at a time only if needed for a slowly spreadable consistency.
9. Glaze and set:
Spoon the glaze over the cooled cake, allowing a little to fall naturally down the sides. Let the glaze set for 20–30 minutes before slicing.

- Zest the limes first: Key limes are much easier to zest while whole. Rub the zest into the sugar to release its fragrant citrus oils and give the cake a fuller lime flavor.

- Check the deepest center: The top may appear finished before the middle is fully baked. Insert the toothpick vertically through the tallest part of the loaf rather than near an edge.
