Pumpkin Marble Bread brings together rich pumpkin flavor, warm spices, and beautiful chocolate ribbons in one tender loaf. Each slice has its own swirled pattern, making this simple quick bread feel a little more special.
Browning the butter adds a lovely toasted flavor that works beautifully with cinnamon, ginger, and a touch of nutmeg. Meanwhile, the chocolate swirl starts with a scoop of the same pumpkin batter, so there’s no separate cake mixture to prepare. A sprinkle of coarse sugar creates a delicate crunch over the soft, moist crumb.
This pumpkin bread is wonderful with morning coffee, but it’s just as tempting for an afternoon treat or after-dinner dessert. Plus, it makes a lovely homemade gift. Let the loaf cool completely before slicing, and those pretty chocolate ribbons will show up beautifully in every piece.

Recipe Yield: 10 servings
INGREDIENTS
2 cups all-purpose flour, spooned and leveled
1/2 cup unsalted butter
1 (15 oz) can pure pumpkin puree
1/4 cup unsweetened natural cocoa powder
3/4 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1/4 cup neutral oil
2 tsp vanilla extract
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp fine sea salt
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/8 tsp ground cloves
2 tbsp whole milk, warm
1 tbsp coarse sugar, for topping
INSTRUCTIONS
1. Prepare the oven:
Preheat the oven to 350°F. Lightly grease a 9×5-inch metal loaf pan and line it with parchment paper, leaving an overhang on the long sides.
2. Brown the butter:
Melt the butter in a light-colored saucepan over medium heat. Cook for 4–6 minutes, swirling occasionally, until the milk solids turn golden brown and smell nutty. Immediately transfer the butter and browned bits to a heatproof bowl. Then, cool for about 10 minutes, until warm but not hot.
3. Mix the dry ingredients:
Meanwhile, in a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves until evenly combined.
4. Combine the wet ingredients:
In a large bowl, whisk the pumpkin puree, eggs, brown sugar, granulated sugar, oil, vanilla, and cooled browned butter until smooth.
5. Make the pumpkin batter:
Next, add the dry ingredients to the pumpkin mixture. Fold gently with a spatula just until no dry flour remains, taking care not to overmix.
6. Prepare the chocolate swirl:
In a small bowl, stir the cocoa powder and warm milk into a smooth paste. Then, add 1 cup of pumpkin batter and gently mix until evenly chocolate-colored.
7. Layer the batters:
Spread one-third of the plain pumpkin batter into the prepared pan. Add half the chocolate batter in small spoonfuls, then repeat with another third of the pumpkin batter and the remaining chocolate batter. Finish with the remaining pumpkin batter.
8. Create the marble pattern:
Draw a butter knife through the layered batters in two or three gentle figure-eight motions, reaching toward the bottom without scraping the pan. Afterward, sprinkle the coarse sugar evenly over the top.
9. Bake until set:
Bake for 60–80 minutes, checking at 60 minutes, until a toothpick inserted into the center comes out without wet batter. For extra accuracy, the center should reach 200–205°F on an instant-read thermometer. If the top darkens too quickly, place an empty baking sheet on the rack above the loaf to shield it.
10. Cool and serve:
Let the bread cool in the pan for 20 minutes. Then, lift it onto a wire rack using the parchment overhang and cool completely before slicing to reveal the chocolate-marble pattern.
Helpful Tips to Perfect This Recipe
- Watch the browned butter closely: The milk solids can turn from golden to burnt quickly. Remove the saucepan from the heat as soon as the butter smells nutty and the little flecks turn amber. Be sure to include those flavorful browned bits in the batter.
- Keep the chocolate swirl defined: Mix the cocoa with warm milk before adding the pumpkin batter to prevent dry cocoa pockets. Then swirl the batters gently. Just a few passes with a knife create beautiful chocolate ribbons without blending away the contrast.
- Allow time for cooling: Pumpkin bread holds plenty of moisture, so let the loaf cool completely before slicing. This helps the crumb set and keeps the marble pattern neat. Store tightly covered at room temperature for up to 2 days, refrigerate for up to 5 days, or freeze for up to 3 months.
