
Brown Butter Chocolate Chip Cherry Bars are soft, chewy, buttery dessert bars with sweet cherry pockets and melty chocolate in every bite. They have that cozy cookie-bar texture people love, but the brown butter gives them a deeper, bakery-style flavor without making the recipe harder.
The cherries add bright, jammy bursts, while a small swirl of cherry preserves makes the bars look extra beautiful once sliced. Meanwhile, semi-sweet chocolate keeps everything balanced and rich. These bars are easy enough for a weeknight bake, yet pretty enough for a summer party, holiday tray, or coffee-table dessert.
They also slice beautifully once cooled, which makes them great for sharing. Although, fair warning, the corner pieces may quietly disappear first.

INGREDIENTS
2 1/4 cups all-purpose flour
1 cup semi-sweet chocolate chips, divided
1/3 cup thick cherry preserves, stirred smooth
1 1/4 cups pitted fresh or thawed frozen dark sweet cherries, quartered, drained, and patted very dry
1 cup unsalted butter
1 cup packed light brown sugar
1/3 cup granulated sugar
2 large eggs, room temperature
1 large egg yolk, room temperature
2 tsp vanilla extract
1/4 tsp almond extract
1 tbsp all-purpose flour, for the cherries
2 tsp cornstarch
1 tsp baking powder
3/4 tsp fine sea salt
INSTRUCTIONS
1. Prepare the pan:
Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment paper, leaving a little overhang for easy lifting.
2. Brown the butter:
Melt the butter in a light-colored saucepan over medium heat. Cook for 5 to 7 minutes, stirring often, until golden brown and nutty. Immediately pour into a large bowl, scraping in the browned bits, and cool for 10 minutes.
3. Mix the wet ingredients:
Whisk the brown sugar and granulated sugar into the warm brown butter. Then, whisk in the eggs, egg yolk, vanilla extract, and almond extract until smooth and glossy.
4. Add the dry ingredients:
Whisk the flour, cornstarch, baking powder, and salt in a separate bowl. Add to the butter mixture and fold just until no dry streaks remain.
5. Fold in the cherries and chocolate:
Toss the cherries with 1 tbsp flour. Then, gently fold them into the dough with 3/4 cup chocolate chips.
6. Fill and swirl:
Spread the dough evenly into the prepared pan. Dollop the cherry preserves over the top, then gently swirl with a butter knife. Sprinkle with the remaining 1/4 cup chocolate chips.
7. Bake the bars:
Bake for 29 to 33 minutes, until the edges are golden, the top looks set, and a toothpick inserted near the center comes out with moist crumbs but no wet batter. Do not overbake.
8. Cool and slice:
Cool completely in the pan for at least 1 hour. Then, lift out with the parchment and slice into bars.
HELPFUL TIPS TO PERFECT THIS RECIPE
- Pat the cherries very dry: Extra moisture can make chocolate chip cherry bars too soft in the center. After pitting and quartering, blot the cherries well with paper towels before adding them to the dough.
- Let the brown butter cool briefly: Warm brown butter helps the sugars dissolve, but hot butter can scramble the eggs. A 10-minute cool-down keeps the texture chewy and smooth.
- Use thick cherry preserves: Thin jam can sink or make the bars gummy. Thick preserves create pretty, jammy swirls without adding too much moisture.
- Cool before slicing: These bars need time to settle. Once fully cooled, the edges stay chewy, the center slices cleanly, and the cherry-chocolate layers look much prettier.
