Recipe Yield: 6 servings

INGREDIENTS

Oat Crust
1½ cups old-fashioned oats
1 cup oat flour
¼ cup almond flour (or additional oat flour for nut-free)
1 tsp. baking powder
½ tsp. cinnamon
¼ tsp. salt
1 large egg
⅓ cup plain Greek yogurt
3 Tbsp. honey
1 tsp. vanilla extract
3 Tbsp. melted unsalted butter or coconut oil

Creamy Vanilla Layer
¾ cup plain or vanilla Greek yogurt
4 oz. cream cheese, softened
1 Tbsp. honey
½ tsp. vanilla extract
1 tsp. lemon zest
Pinch of salt

Berry Topping
1 cup strawberries, thinly sliced
½ cup blueberries
⅓ cup blackberries, halved if large

Finish (Optional but Highly Recommended)
1–2 tsp. honey for drizzling
1 Tbsp. toasted oats
Extra lemon zest for garnish

INSTRUCTIONS

1. Preheat and prepare:
Preheat oven to 375°F (190°C). Line a round pizza pan or baking sheet with parchment paper and lightly grease.

2. Prepare the oats:
Add old-fashioned oats to a food processor and pulse 4–5 times until lightly broken down. Leave some texture for a homemade, hearty crust.

3. Make the crust dough:
In a large bowl, stir together pulsed oats, oat flour, almond flour, baking powder, cinnamon, and salt. Then add egg, Greek yogurt, honey, vanilla, and melted butter. Mix until a soft dough forms. The dough should feel slightly sticky but easy to press.

4. Shape the pizza:
Transfer dough to the prepared pan and press into a 10-inch round, about ⅓-inch thick for a sturdier crust. Slightly build up the edges for a pizza-style look.

5. Bake the crust:
Bake for 15–18 minutes, or until lightly golden around the edges and set in the center. Do not overbake. The crust will continue to firm slightly as it cools. Cool completely on the pan or a wire rack.

6. Make the creamy layer:
Meanwhile, in a medium bowl, whisk together Greek yogurt, cream cheese, honey, vanilla, lemon zest, and a pinch of salt until smooth, creamy, and lightly fluffy.

7. Decorate the pizza:
Spread the creamy layer evenly over the cooled crust. Arrange sliced strawberries in a soft starburst or pinwheel pattern. Then add blueberries between the strawberries and place blackberries toward the center for a naturally beautiful finish.

8. Chill briefly and finish:
For the cleanest slices, chill the pizza for 10–15 minutes. Just before serving, lightly drizzle with honey and sprinkle toasted oats and extra lemon zest over the top.

Helpful Tips to Perfect This Recipe

  • Cool the crust completely: A fully cooled crust keeps the creamy topping thick and fresh. Additionally, it helps the pizza slice cleanly without softening underneath.
  • Dry the berries well: After rinsing, gently pat berries dry with paper towels. Otherwise, extra moisture may thin the creamy layer and affect texture.
  • Don’t skip the short chill: Although optional, chilling the assembled pizza for 10–15 minutes helps everything set beautifully. As a result, slices look cleaner and feel more bakery-quality.
