24 thick-cut dill pickle chips
24 thin fresh jalapeño slices
12 slices regular-cut bacon, halved crosswise
2 tbsp honey
1 tsp Dijon mustard
1/2 tsp crushed red pepper flakes
1/4 tsp smoked paprika
1 tbsp finely chopped fresh chives
1/2 cup ranch dressing, for serving

INSTRUCTIONS

1. Dry the pickles:
Place the pickle chips between paper towels and press gently until very dry. Removing excess brine helps the bacon crisp instead of steam.

2. Assemble the bites:
Place 1 jalapeño slice against each pickle chip. Wrap each stack snugly with 1 bacon half, overlapping the ends underneath.
