3 (15-oz) cans cannellini beans, rinsed and well drained
1 (28-oz) can crushed tomatoes
2 cups shredded low-moisture whole-milk mozzarella cheese
1/3 cup finely grated Parmesan cheese
2 oz sliced pepperoni
1 small yellow onion, finely diced
2 tbsp tomato paste
1 small garlic bulb
1 tsp olive oil
2 tbsp extra-virgin olive oil
1 tsp dried oregano
1/2 tsp dried basil
1/4 tsp crushed red pepper flakes
3/4 tsp kosher salt
1/4 tsp black pepper
1 tsp balsamic vinegar
1/3 cup loosely packed fresh basil leaves, torn

INSTRUCTIONS

1. Roast the garlic:
Preheat the oven to 400°F. Slice about 1/4 inch from the top of the garlic bulb to expose the cloves. Drizzle with 1 tsp olive oil, place cut-side up in a small covered baking dish, and roast for 35–45 minutes, until completely soft and lightly golden.

2. Cook the onion:
Heat the remaining 2 tbsp olive oil in a 12-inch broiler-safe skillet over medium heat. Add the onion and cook for 5–6 minutes, stirring occasionally, until soft and lightly golden.

3. Build the tomato base:
Add the tomato paste, oregano, dried basil, red pepper flakes, salt, and black pepper. Cook for 1 minute, stirring frequently, until the tomato paste darkens slightly.

4. Add the roasted garlic:
Squeeze the roasted garlic cloves from their skins into a small bowl and mash until smooth. Stir the roasted garlic into the skillet until evenly distributed.

5. Simmer the sauce:
Add the crushed tomatoes and balsamic vinegar. Bring to a gentle simmer and cook uncovered for 8–10 minutes, stirring occasionally, until the sauce thickens slightly.

6. Fold in the beans:
Gently stir the cannellini beans into the tomato sauce. Simmer for 3–4 minutes, just until the beans are heated through and coated without beginning to break apart.

7. Add the toppings:
Spread the beans evenly in the skillet. Sprinkle the mozzarella over the top, followed by the Parmesan. Arrange the pepperoni across the cheese, leaving a little space between the slices.

8. Bake until bubbly:
Increase the oven temperature to 425°F. Bake uncovered for 12–15 minutes, until the sauce is bubbling around the edges and the cheese is completely melted.

9. Brown the top:
Broil for 1–2 minutes, watching closely, until the mozzarella develops scattered golden spots and the pepperoni edges become lightly crisp.

10. Finish and serve:
Let the pizza beans rest for 5 minutes. Scatter the torn fresh basil over the top and serve warm.
