Creamy Cajun Pepper Salmon turns an ordinary skillet dinner into something rich, colorful, and genuinely memorable. The salmon gets a deeply golden Cajun crust, then finishes gently in a silky roasted red pepper sauce with garlic, shallot, Parmesan, spinach, and fresh lemon. Sweet peppers soften the spice, while Dijon and tomato paste add savory depth without taking over.

Although the finished dish feels restaurant-worthy, the method stays practical. Everything cooks in one skillet, and the blended pepper base gives the sauce body without flour. Better still, the salmon finishes inside the sauce, so it stays moist while absorbing plenty of flavor. Serve it over mashed potatoes, rice, pasta, or creamy grits, with a green vegetable alongside. INGREDIENTS

4 center-cut skinless salmon fillets, 6 oz each, about 1 inch thick
1 tbsp salt-free Cajun seasoning, divided
1 tsp kosher salt, divided
¼ tsp black pepper
1 tbsp olive oil
1 tbsp unsalted butter
¾ cup drained jarred roasted red peppers
½ cup low-sodium chicken broth
1 tsp Dijon mustard
1 small yellow bell pepper, finely diced
1 small shallot, finely chopped
3 garlic cloves, minced
1 tbsp tomato paste
¾ cup heavy cream
⅓ cup finely grated Parmesan cheese
2 cups baby spinach
1 tsp finely grated lemon zest
1 tbsp fresh lemon juice
2 tbsp chopped fresh parsley

INSTRUCTIONS

1. Blend the pepper base:
Blend the roasted red peppers, chicken broth, and Dijon mustard until completely smooth.

2. Season the salmon:
Pat the salmon thoroughly dry. Season both sides with 2 tsp Cajun seasoning, ¾ tsp salt, and the black pepper.

3. Sear the salmon:
Heat the olive oil in a large 12-inch skillet over medium-high heat. Add the salmon presentation-side down and cook for 3–4 minutes until deeply golden. Flip, cook for 1 minute, then transfer to a plate. The centers should remain underdone.

4. Build the flavor base:
Reduce the heat to medium and melt the butter. Add the yellow pepper and shallot, then cook for 4–5 minutes until softened. Stir in the garlic, tomato paste, and remaining 1 tsp Cajun seasoning. Cook for 45 seconds.

5. Simmer the pepper sauce:
Pour in the blended pepper mixture, scraping up the flavorful browned bits. Simmer for 3–4 minutes until slightly reduced. Stir in the cream and simmer gently for 2 minutes.

6. Finish the creamy sauce:
Reduce the heat to low. Gradually stir in the Parmesan until melted and smooth. Fold in the spinach, lemon zest, and remaining ¼ tsp salt. Cook for 1 minute until the spinach begins to wilt.

7. Finish the salmon:
Return the salmon to the skillet and spoon sauce over each fillet. Simmer gently for 2–4 minutes, depending on thickness, until the centers reach 145°F. Remove from the heat, stir the lemon juice into the sauce around the salmon, and finish with parsley.


HELPFUL TIPS TO PERFECT THIS RECIPE

  • Choose evenly sized salmon: Similar-thickness fillets cook at the same rate. If your skillet feels crowded, sear the salmon in two batches so it browns instead of steaming.
  • Use salt-free Cajun seasoning: Commercial blends vary greatly in sodium and heat. If your seasoning contains salt, reduce the added kosher salt and adjust after tasting the sauce.
  • Keep the salmon underdone after searing: The brief second-side cook is intentional. The salmon finishes gently in the sauce, which protects its moist, flaky texture.
  • Keep the sauce below a boil: High heat can make Parmesan grainy or cause the cream to separate. If the finished sauce becomes too thick, loosen it with 1–2 tbsp broth.
