1 1/2 tbsp reduced-sodium soy sauce
1 tbsp pure maple syrup
1 tbsp rice vinegar
2 tbsp water
1 tsp toasted sesame oil
Lime Yogurt
1/2 cup plain Greek yogurt
1 tbsp fresh lime juice
1 tsp honey

2 cups cooked jasmine rice
1 cup thinly sliced English cucumber
1 medium avocado, sliced
2 green onions, thinly sliced
2 tsp toasted sesame seeds
INSTRUCTIONS
1. Roast the sweet potatoes:
Preheat the oven to 425°F. Toss the sweet potatoes with olive oil, salt, and black pepper. Spread in a single layer on a parchment-lined baking sheet and roast for 25–30 minutes, turning once, until tender with deeply golden, crisp edges.
2. Mix the gochujang sauce:
Stir the gochujang, soy sauce, maple syrup, rice vinegar, and water together in a small bowl until smooth.
3. Brown the beef:
Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it into irregular crumbles, until well browned and cooked to 160°F.
4. Add the aromatics:
Reduce the heat to medium. Add the garlic, ginger, and black pepper. Cook for 30 seconds, stirring constantly.
5. Glaze the beef:
Pour the gochujang sauce over the beef. Cook for 2–3 minutes, stirring often, until reduced and lightly coating the beef. Remove from the heat, then stir in the toasted sesame oil.
6. Make the lime yogurt:
Stir the Greek yogurt, lime juice, and honey together until smooth.
7. Build the bowls:
Divide the warm jasmine rice among 4 bowls. Arrange the crispy sweet potatoes, gochujang beef, cucumber, and avocado over the rice.
8. Finish and serve:
Spoon the lime yogurt over each bowl. Finish with green onions and toasted sesame seeds, then serve immediately.
