INGREDIENTS

1 1/2 cups all-purpose flour
1 cup fresh blueberries, rinsed and thoroughly dried
3/4 cup plain whole-milk Greek yogurt
3/4 cup whole milk, plus 1 to 2 tbsp if needed
3 tbsp unsalted butter, melted and slightly cooled
2 tbsp granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp fine sea salt
2 large eggs
1 tsp pure vanilla extract
1 tsp finely grated lemon zest
Neutral oil, for the skillet
Butter and warm maple syrup, for serving

INSTRUCTIONS

1. Combine the dry ingredients:
Whisk the flour, sugar, baking powder, baking soda, and salt in a large bowl.

2. Mix the wet ingredients:
Whisk the yogurt, milk, eggs, vanilla, and lemon zest in a separate bowl until smooth. Slowly whisk in the melted butter.

3. Finish the batter:
Pour the wet mixture into the dry ingredients. Fold gently just until no dry flour remains. Let the thick, slightly lumpy batter rest for 8 minutes.

4. Check the consistency:
The rested batter should be thick but easy to scoop and spread. If it feels unusually stiff, fold in additional milk 1 tbsp at a time.

5. Heat the skillet:
Preheat a nonstick skillet over medium-low heat or an electric griddle to 350°F. Lightly brush the surface with neutral oil.

6. Portion the pancakes:
Spoon a scant 1/3 cup batter onto the skillet and gently spread it into a thick round. Scatter about 2 tbsp blueberries over the surface and press them lightly into the batter.

7. Cook the first side:

8. Flip and finish:

HELPFUL TIPS TO PERFECT THIS RECIPE

  • Measure the flour lightly. Spoon it into the measuring cup and level the top. Scooping directly from the bag can pack in too much flour and produce dense pancakes.
  • Keep a few lumps in the batter. Mix only until the dry flour disappears. A perfectly smooth batter usually means it has been overmixed.
  • Adjust for the yogurt. Greek yogurt varies considerably in thickness. Add the extra milk only when the rested batter is too stiff to spread gently.
