Healthy Blueberry Yogurt Oat Cake is a simple, lightly sweet cake made for breakfast, snacks, or an easy dessert. Greek yogurt, oats, and a little olive oil keep the crumb moist and tender, while honey or maple syrup adds gentle sweetness without making it feel heavy. Meanwhile, fresh blueberries soften into juicy pockets throughout the cake as it bakes.
The batter comes together with a whisk and two bowls, so there’s no mixer or complicated technique. Once cooled, the cake is soft and moist yet sturdy enough to slice cleanly. Serve it plain, dusted with powdered sugar, or add the light glaze and fresh blueberries for a prettier finish. It pairs especially well with coffee or tea and keeps beautifully for an easy make-ahead treat.

Recipe Yield: 9 servings
INGREDIENTS
1 cup plain full-fat Greek yogurt
½ cup rolled oats
1 cup all-purpose flour
⅓ cup honey or maple syrup
2 large eggs
¼ cup mild olive oil or melted butter
2 tbsp milk
1 tsp vanilla extract
1½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
1 cup fresh blueberries
1 tbsp flour (for coating blueberries)
½ cup powdered sugar (optional glaze)
1 tbsp milk (optional glaze)
Fresh blueberries, for topping (optional)
INSTRUCTIONS
1. Prepare the oven:
Preheat oven to 350°F. Line the bottom of a 9-inch round metal cake pan with parchment paper, then lightly grease.
2. Mix wet ingredients:
In a large bowl, whisk yogurt, eggs, honey, oil, milk, and vanilla until smooth.
3. Combine dry ingredients:
In a separate bowl, stir oats, flour, baking powder, baking soda, and salt.
4. Build the batter:
Fold dry ingredients into wet mixture just until combined.
5. Add blueberries:
Toss blueberries with 1 tbsp flour, then gently fold into batter.
6. Bake:
Spread batter evenly in the prepared pan. Bake 35–40 minutes, until lightly golden and a toothpick inserted near the center comes out clean or with a few moist crumbs.
7. Cool and finish:
Cool in the pan for 20 minutes, then transfer to a rack and cool completely. Serve plain or dusted with powdered sugar. For the glazed finish, whisk powdered sugar with milk until smooth, drizzle over the cooled cake, and top with fresh blueberries.
HELPFUL TIPS TO PERFECT THIS RECIPE
- For the best crumb: Use full-fat Greek yogurt and mix only until the dry ingredients disappear. Overmixing can make an oat-based cake heavier.
- To keep the blueberries evenly distributed: Dry freshly washed berries thoroughly before coating them with flour. Excess water can make the coating gummy.
- For clean slices: Let the cake cool completely before cutting. The yogurt-oat crumb continues to set as it cools; individual slices can always be gently warmed before serving.
