Line a small baking sheet or flat tray with parchment paper. Split each date open and arrange them cut-side up in a tight overlapping rectangle.
2. Press the base:
Cover the dates with another sheet of parchment. Firmly press and roll them into an even connected layer about 1/4-inch thick. Remove the top parchment.
3. Make the tahini layer:
Stir the tahini, maple syrup, vanilla, and fine sea salt until smooth and thickened but spreadable. Spread evenly over the dates, leaving a small border around the edges.
4. Add the pistachios:
Sprinkle about 1/4 cup chopped pistachios over the tahini. Press them in gently so they stay attached.
5. Melt the chocolate:
Combine the chocolate and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring after each, until completely smooth.
6. Cover the bark:
Pour the melted chocolate over the pistachio layer and spread it into a thin, even coating. Sprinkle with the remaining pistachios and flaky sea salt.
7. Chill until firm:
