These frozen yogurt bites are simple enough for an afternoon snack, yet pretty enough for brunch or dessert. They also come together without baking, special equipment, or a long ingredient list. Vanilla yogurt makes the easiest three-ingredient version, while plain yogurt works beautifully with a little honey or maple syrup. After a few minutes at room temperature, each bite softens into a creamy, parfait-inspired treat. INGREDIENTS
1½ cups whole-milk vanilla Greek yogurt, divided, or plain whole-milk Greek yogurt
1 cup fresh strawberries, hulled and thoroughly dried
¾ cup granola, divided
1–2 tbsp honey or maple syrup, optional, for plain yogurt
INSTRUCTIONS
1. Prepare the pan:
Place 8 silicone muffin liners in a standard muffin pan or on a small freezer-safe tray.
2. Make the granola bases:
Lightly crush ½ cup granola. Stir in 3 tbsp yogurt until evenly moistened. Divide among the liners, then gently press into thin, even bases. Freeze for 10 minutes.
3. Mix the strawberry yogurt:
Finely chop the strawberries, then reserve about ¼ cup for topping. Mash half of the remaining strawberries with a fork until juicy but not puréed. Fold the mashed and chopped strawberries into the remaining yogurt. If using plain yogurt, stir in the honey or maple syrup.
4. Fill and finish:
Divide the strawberry yogurt among the liners and gently smooth the tops. Scatter the reserved chopped strawberries and remaining ¼ cup granola over each bite.
5. Freeze until firm:
Freeze for at least 4 hours, or until completely firm through the centers.
6. Serve:
Remove the bites from the liners. Let them soften at room temperature for 8–10 minutes before enjoying.
HELPFUL TIPS TO PERFECT THIS RECIPE
- Use whole-milk Greek yogurt: Its thick texture and higher fat content create creamier strawberry yogurt bites. Regular or nonfat yogurt freezes noticeably harder.
- Dry and finely chop the berries: Extra strawberry moisture can create larger ice crystals. Small pieces also make the frozen bites easier to eat.
- Choose a tender granola: Granola with small oat clusters works best. Large nuts or very hard clusters can become difficult to bite once frozen.
- Allow enough softening time: The bites should feel firm but no longer rock-hard before serving. Store them airtight in the freezer for up to 2 weeks.
