INGREDIENTS

For the baked oatmeal:
2 1/2 cups old-fashioned rolled oats
1 1/2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 tsp fine sea salt
2 large eggs
1 3/4 cups whole milk
1/2 cup plain whole-milk Greek yogurt
1/4 cup pure maple syrup
3 tbsp unsalted butter, melted and slightly cooled
2 tsp vanilla extract

For the cinnamon ribbon:
1/3 cup packed light brown sugar
1 tbsp ground cinnamon
2 tbsp all-purpose flour
1/8 tsp fine sea salt
3 tbsp unsalted butter, melted

For the cream cheese glaze:
2 oz cream cheese, softened
1/2 cup powdered sugar
1 tbsp whole milk, plus more as needed
1/2 tsp vanilla extract
Pinch of fine sea salt

INSTRUCTIONS

1. Preheat and prepare:
Preheat the oven to 350°F. Lightly grease an 8-inch square baking dish.

2. Mix the oatmeal:
Whisk the oats, baking powder, cinnamon, nutmeg, and salt in a large bowl. In another bowl, whisk the eggs until blended. Then, whisk in the milk, Greek yogurt, maple syrup, melted butter, and vanilla. Pour the wet mixture over the oats and stir well. Rest for 10 minutes, then stir once more.

3. Make the cinnamon ribbon:
Meanwhile, stir the brown sugar, cinnamon, flour, and salt in a small bowl. Add the melted butter and mix until a thick, spoonable paste forms.

4. Layer and swirl:
Spread half of the oatmeal mixture evenly in the prepared dish. Drop half of the cinnamon mixture over it in small spoonfuls, then gently swirl with the tip of a small silicone spatula. Repeat with the remaining oatmeal and cinnamon mixture, swirling only through the upper layer.

5. Bake the oatmeal:
Bake for 38 to 43 minutes, until the edges are lightly golden and the center no longer looks wet. Keep the center tender and avoid overbaking.

6. Make the cream cheese glaze:
Mash the softened cream cheese until completely smooth. Then, whisk in the powdered sugar, milk, vanilla, and salt. Add another small splash of milk only if needed for a thick drizzling consistency.

7. Cool, glaze, and serve:
Cool the baked oatmeal for 15 minutes so the squares can set. Drizzle with the cream cheese glaze, slice, and serve warm.
